Freshen Up Friday

I find myself in a rut with the first two meals of the day – that’s why I devoted a few days this week to trying new recipes for breakfast.  How about if we freshen up lunchtime today? 
I made these  Pizza Burgers this week after making my batch of homemade English Muffins.  They’re so simple, but a nice change at lunchtime.

Toast an English muffin, then top it with pizza sauce (if you don’t have any you could use tomato sauce with some oregano and garlic added.  Then top the sauce with whatever toppings you have.  I added pepperoni slices, then topped that with Mozzarella Cheese.  Pop them under the broiler until the cheese melts.  That’s it!  Kids love these!

One of our very favorite lunches around here is a tortilla wrap.  I stuff all kinds of good things inside.  I usually roast chicken breasts, then put them in the freezer to have for lunches.  I dice up the chicken and pile it on the tortilla then also add a variety of things such as:  tomatoes, lettuce, cheese, avocado, sour cream red peppers and salsa. 

I used to make these for my girls when they were young.  These are Corn Dog Muffins. 

Mix up a package of Jiffy Mix cornbread, spoon into liners, then slice hot dogs and place a few slices in each muffin and bake as directed. 

If you want to give them the look of corn dogs, pour the muffin mix into well-greased cast iron muffin sticks, then place the hot dog slices in a line.  When ready to eat, dip into ketchup and mustard.

  1. I remember having those pizza burgers a long time ago!

    I've been making chicken caesar wraps with my roasted chicken from the freezer. I just put the thawed chicken, caesar dressing, cheese, avocado, tomatoes… whatever I have in a tortilla. yum!!!
