Three-Ingredient Pancakes

My breakfast routine for about five days of the week is Greek yogurt, fruit and granola. l eat the Oikos yogurt because it has 15 grams of protein and keeps my sugar from dropping. I eat this menu because it’s delicious, and also healthy.

But there are days when I would love to enjoy a pancake, but cringe at starting the day with lots of calories. Then I tried a three-ingredient pancake recipe that was absolutely delicious, and my breakfast menu now has a whole new entry!

The only ingredients you need are

  • 1 Ripe banana – I used one I had frozen, then thawed it in the microwave
  • Egg
  • 2 Tbl. self-rising flour
    (If you don’t have self-rising flour, mix together
    1 cup flour
    1 1/2 teaspoons baking powder
    1/4 teaspoon fine salt 

Mash the banana in a small bowl until smooth. Whisk in the egg and then the flour until smooth. Set aside for 5 minutes.

Lightly coat a nonstick skillet with cooking spray and heat over medium. Spoon about 1 1/2 Tbl batter into the skillet and spread it into a small 2-inch circle with the back of a spoon.

Repeat with the remaining batter to make four pancakes. Cook until the pancakes are lightly browned on the bottom, 1-2 minutes. Flip and cook until the pancakes are cooked through 1-2 minutes more.

Top with fresh fruit such as banana slices and berries.
