Southerners love their chicken salad, and stick close to a tried and true recipe, perhaps handed down for generations. These are all wonderful, but friends, have tried Hot Chicken Salad? You haven’t lived until you do!
Earlier last week my hair dresser mentioned she’d had this dish at a restaurant, and I realized I hadn’t made it in years! Then it dawned on me that I had all the ingredients for this it in my fridge and pantry. I immediately knew what we would have for Sunday dinner!

Hot Chicken Salad
Ingredients
2 cups cooked chicken breast meat, cubed
1 cup diced celery
1/2 cup slivered almonds
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons fresh lemon juice
1 cup mayonnaise
1 cup grated sharp Cheddar Cheese
2/3 cup crushed potato chips
Directions
Preheat oven to 350 degrees F. Spray a 13 by 9-inch baking dish with vegetable oil cooking spray.
In a large mixing bowl combine the chicken, celery, almonds, salt, pepper, lemon juice, mayonnaise, and cheese. Place the mixture in the prepared baking dish. Spread the crushed potato chips on top. Bake for 20 minutes, or until bubbly.
The flavors are so delicious! I added a Caesar Salad to complete the meal. I put the dish together, (except for the potato chip topping) on Saturday night. When we got home from church, I added the chips on top and then baked it. It made for a great Sunday dinner!
