New Adventures, New Discoveries

Happy New Year, friends! We rolled the new year in quite quietly. My goal for December was rest and refreshment, and that’s exactly how December 31 found me! I have no regrets about that! After a busy week of Christmas activity, it was a blessing to slow things down.

On New Year’s Eve I had the blessing of reviewing my Bible journaling notebook that I used for my personal Bible reading. Each day as I read, I look for the character of God. thread I saw repeated many times was

  • God is near
  • God is faithful
  • God’s Word is enough

As I’ve begun again in the Bible Recap on January 1, I’ve already been so blessed in Who my God is! I have a new notebook ready to be filled with my discoveries. This is going to be another wonderful journey learning and loving my God more!

At the end of the week, we took a weekend trip to visit with my mom before our busy traveling schedule starts up next week! We had sweet chats, an errand run, lunch out, and supper in. She let me cook for her one night. It was a blessing to serve her and give her a much needed break. She loves pasta, so I made this easy Creamy Bow Tie Pasta with Italian Sausage. It’s super yummy and a cinch to make.

For dessert, I made Coconut Macaroons. These were SO easy and they make only six cookies – perfect for our need! This whole site is wonderful with so many recipes scaled back for only two servings. I love that! In December I tried these cookies on her site as well and they were scrumptious!

These little cookies are toasty and sweet. Oh my goodness. It’s a good thing they make a small batch! They use one egg white, which left me with one egg yolk. Hmmm, what could I make so I wouldn’t waste it?

I found a recipe for a one egg yolk custard made in the microwave! In about five minutes it was done and in the fridge to cool off. It was a lovely little side to the macaroon. We each had a little spoon of the custard and dipped the cookie in it. Heaven!

Custard (Made in the microwave!)
Ingredients

1 Egg Yolk
1/2 cup Milk
1 tablespoon Caster Sugar *add extra for sweeter custard (I used 2 Tbl)
1 tablespoon Plain Flour -( I used about 3/4 Tbl)
1-2 drops Vanilla Extract

Method
  1. Place all ingredients in a heat-proof bowl, and use a small whisk to mix until smooth.
  2. Heat in the microwave at a medium power (50), 500 to 600W recommended, for 1 minute. Whisk well and heat for 1 minute again. Whisk well and heat until cooked. Whisk well until smooth.

**I ended up doing the “Heat 1 minute and whisking” about 4 1/2 times. The texture was creamy and delicious! If you wanted a little more sweetness you could add a dash of maple syrup when you serve it. I regret not getting a picture when I served it…we were too eager! No worries because I will be making this again!

The beginning of our year has already been filled with lots of good things! Even if there is hardship now or just around the corner of your 2026, we know our God is good and can never move from that standard. It’s His character, and that’s nothing new! He always has been and always will be!
