Egg white bites

Egg whites are so good for you! They improve brain function, promote strong bones and muscles and are low in fat. But, let’s face it, they can be boring! I found the Egg White omelette Bites at Dunkin‘ Donuts and loved them!! I found a method and recipe to make them at home so we could enjoy them more often AND all the health benefits, too!

These are whipped up and done in less than 15 minutes. They only take 8-10 minutes to bake. All you’ll need is a donut pan and your omelette ingredients.

Yum! Add or omit whatever you enjoy in your omelette!

INGREDIENTS

  • 3 large egg whites
  • 1/4 t salt
  • 1/2 t pepper
  • 3 T seeded diced tomato, 1/4″ pieces
  • 2 T baby spinach leaves, chopped into 1/4″ pieces
  • 3 T Four Cheese Blend
  • Cooking spray

INSTRUCTIONS

  1. Heat oven to 350.
  2. In a large measuring cup beat the egg whites, salt and pepper. Add diced tomato and chopped baby spinach. Add cheese.
  3. Coat mini donut pan with cooking spray. Pour mixture into pan making sure that the tomato, spinach and cheese gets evenly distributed.
  4. Bake for 8 to 10 minutes until cooked through.

This makes 6 egg white omelets – it will fill one donut pan.

These are are great way to start your day! Thanks, DD!! They also reheat very well in the microwave. You could even freeze them to use later in the week! So handy to have a delicious breakfast ready for you each day!
