Weight Watchers Chocolate Chip Biscotti

After all the sugar cookies and sweet treats of Christmas have been devoured and their cute little tins stored away until next year, I vow I’m never eating sweets again….until tomorrow comes and the need for “a little something sweet” hits my taste buds! But I’m happy to say that there are little treats that are delicious and don’t have to kill the hope of eating better!

Enter the Chocolate Chip Biscotti, found on Weight Watchers Site. It’s really hard to believe these are reduced in anything because they’re SO good! Don’t be intimidated by the word Biscotti; it simply means they’re baked twice. They get a little crunchy and become the perfect dunking cookie! Dipped into hot tea or coffee, they are a delicious treat! Here’s how you make them.

Chocolate Chip Biscotti

2 Cups flour
1/2 tsp salt
1 tsp Baking powder
3 Tbl semi-sweet Chocolate Chips
1 cup Sugar
2 Eggs
1 tsp Canola oil
1 tsp Vanilla
Cooking Spray

Instructions

  1. Preheat oven to 325°F. Lightly coat a large baking sheet with cooking spray.
  2. In a medium bowl, whisk together flour, baking powder, and salt until combined; stir in chocolate chips.
  3. Using an electric mixer, beat sugar, eggs, oil, and vanilla until frothy, about 2 minutes. Make a well in center of dry ingredients and pour in egg mixture; stir just until moistened and dough forms.
  4. Shape dough into a 13 X 3-inch log on prepared baking sheet. Note: The batter will be dry. After you mix it in the bowl, dump it onto the baking sheet and press it into a log. Bake for 30 minutes and remove from oven. Reduce oven to 300°F.
  5. Let biscotti cool for 10 minutes; cut warm log crosswise, on a slight diagonal, into twenty 1/2-inch-thick slices. Stand slices, about 1 inch apart, on baking sheet and return to oven and bake for 12 minutes more. The centers will be soft but biscotti will harden when cooled.
  6. Serving size: 1 biscotti = 5 Weight Watchers Points

This makes a nice tray of cookies. You can wrap them and store them in the freezer for a quick little treat! Pile some together into a treat bag and share with a friend! Just make them! If you love the flavors of a chocolate chip cookie, you’ll love these and won’t have the guilt!
