Bacon, Chicken, Corn Quesadilla

I often struggle with what to fix for lunch!! It needs to be quick, but I also want it to have protein, and of course, I want it to be delicious!

If you get stuck on what to fix for lunch, I have a great “recipe” for you! Recently I found three simple things in my fridge and freezer that made for a scrumptious quesadilla!

  • Cooked chicken breasts
  • Cooked bacon pieces
  • Corn

Chicken, Bacon and Corn Quesadilla

  • Cooked chicken breast
  • Cooked, chopped bacon
  • Frozen corn, thawed (I run it under cold water)
  • Cheddar Cheese
  • Flour tortilla

Spray skillet with cooking spray. Lay tortilla in the skillet and on one half of tortilla, layer in chicken, bacon, corn and cheese. Fold tortilla in half and cook until lightly browned and crispy. Flip and brown other side.

Serve with sour cream and salsa. Enjoy!

Oh my! This was so good and so simple! These flavor combinations were delicious and lunch couldn’t have been quicker!

You can add so many varieties of meats and veggies to make a simple lunch, just using your leftovers! The possibilities are endless! Look in your leftover containers for little pieces of meat – steak, pork tenderloin, roast beef, bacon or fish. Add whatever veggies you have – corn, tomatoes, onions, or peppers.

Lunch can be as easy as using up the little bits of leftovers! I hope you’ll try this chicken, bacon and corn combination in the near future!

  1. I made chicken quesadillas for lunch inspired by this post! I used homemade sourdough tortillas filled with shredded cheese, chopped cooked chicken, chopped bell peppers, and salsa. Yummy. 🙂
