Honey Dijon Salad Dressing

A special salad can add so much to a simple supper of fish (like this Dijon Crusted recipe) or Grilled Chicken Breasts! A fabulous salad may be all you need to add to the protein you’re serving. The good news is that it doesn’t take lots of effort to come up with a salad that is a special addition to your meal! I love making my own salad dressings to make my salad really delicious, and I’ve shared many different varieties here on my blog.

Recently I made another kind of dressing – Honey Dijon, that was the perfect blend of tangy and sweet! I also lightened it up a bit by using a light Mayo.

Honey Dijon Dressing – Lightened up

Ingredients

  • ¼ cup mild-flavored extra-virgin olive oil
  • ¼ cup honey
  • ¼ cup light Mayonnaise
  • 1 ½ tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • Freshly ground black pepper to taste

Instructions

  • Measure all ingredients into a bowl and whisk vigorously until well-blended or mix in a Mason jar and shake vigorously. Taste and adjust seasonings, adding more salt and pepper if necessary.
    Use as a salad dressing or a dipping sauce.
  • Store leftovers in a sealed container in the refrigerator for up to 2 weeks; shake well before using.

To make the salad pictured above, I used

  • Chopped Butter lettuce
  • Chopped apples
  • Walnuts
  • Craisins
  • Honey Goat Cheese

Top it with the Honey Dijon Dressing. Serve immediately.

This dressing could make anyone a salad lover! Trust me – you need to whip this up and try it for yourself!
