Refreshing Summer Menu

Our Father’s Day was a sweet day! Even though my heart pangs at missing my precious dad, I rejoice that he’s in heaven and we’ll have eternity to be together!

Yesterday we had the blessing of being in church and worshiping, then heading home to have our daughter, son-in-law, and grandsons here for dinner.

I love a good reason to decorate the table with a theme and also create a menu for the day. I went with blue and white and folded the napkins like a man’s tie. My grandsons “wore” theirs before the meal! Too cute!

The weather has heated up, so I chose to make a meal that was refreshing and on the “cooler” side. I grilled chicken on my new Ninja indoor grill and griddle. I got it a couple weeks ago, and I can’t tell you how much I’ve used it already! I love it! It was so nice not to have to be out in the heat making my dinner! I also added blueberries and fresh peaches to the salad. Yum!

These Rosemary and Sea salt flatbread are so easy and so delicious. They would make a great appetizer, but I served them alongside the salad. You could vary the toppings, using fruits like fresh peaches and goat cheese. They are so fast to cook, making them a great addition to any meal!


Dessert was simple. I grilled fresh pineapple slices with a sprinkling of cinnamon and sugar on them, then placed a scoop of vanilla ice cream on top, then garnished the ice cream with more cinnamon and sugar.

This menu is the perfect summertime meal. It would be great for a ladies’ luncheon, a baby or wedding shower…or any time you need a lighter, delicious meal on a hot day!

To get things ready ahead of time, I grilled the chicken the day before and served it cold on the salad.I made the salad dressing the day before, too. I also made up the flatbread dough the day before, but grilled them just before dinner. The pineapple was all sliced ahead of time, and ready to grill.

  1. Denise, I tried your flatbread recipe yesterday and my family LOVED it! I didn’t have figs (although that’s a family favorite, so I’ll try that next time) so I used peaches and blackberries. I did everything else like your recipe though. Delicious! This will be on repeat from now on and it will be fun to try different toppings. Thanks for sharing!
