Tortilla Shell Quiche

While on the hunt for healthy alternatives for some of my favorite breakfast foods, I found the delicious Three-Ingredient Pancakes that I shared here recently. I have made them several times and swoon at their texture and flavor!

Then my daughter told me about making a quiche and swapping out the caloric crust for a tortilla shell! I buy the La Banderita Carb Counter tortillas and they are super low in calories, so I knew they would be a good choice for my “crust.”

You can make these in a large or small pan, depending on your need. I made a small one in a glass dish and it made two servings.

All you need to do is:

  • Spray your pan with cooking spray.
  • Place the tortillas in your pan.
  • Mix up eggs and milk (the number depends on your pan size).
  • Toss in your desired meats, cheese and veggies.
  • Bake for about 20-25 minutes, or until til set.

These are so good, and good for you while giving a healthy dose of protein to keep you satisfied all morning!

These would also make a nice lunch or dinner, with a salad served on the side!

Get creative with this recipe! Make small ones in muffin tins, layer lots of tortillas in a casserole dish, or ise a cute little dish and make a quiche for two! No matter tue size, the results will he delicious!
