What’s for Lunch? Chicken Tostadas

Coming up with what to have for lunch is the most difficult meal decision I make! I need protein, but don’t want to fix something huge for the noon meal, nor do I want to prepare something that’s going to take much time. I try to keep it simple, but filling.

For that reason I try to always have cooked chicken breasts in the freezer. I put the prepared meat in small ziplock bags so I can thaw it quickly in the microwave. One day recently I pulled a bag of chicken out and said, “Lord, what can I make for lunch with this meat? (How awesome is it that we can pray about everything?) I then remembered that I had tostada shells in my pantry. Bingo! That would make a great, fast meal! Lunch was ready in 15 minutes!

I knew I had items on hand that would make great toppings on the chicken. I quickly pulled out canned black beans, corn, fresh tomatoes, avocado and some shredded cheese.

All I did to make these was place the tostada shell on a sheet pan, then I topped it with with the chicken, vegetables and lastly the cheese. I placed them in the oven at 350 degrees for about 10 minutes, or just until the cheese melts. I added a little Spicy Ranch dressing on top before serving.

I love keeping these shells on hand for quick lunches. You could add whatever vegetables you have in the fridge or pantry. Red and yellow peppers, red onions,and banana peppers would all be good additions. Taco meat is an option for the meat, or you could just do them with the vegetables. Top them with sour cream or guacamole after baking.

You can’t beat a good Mexican flavored lunch that is so quick and delicious! My favorite lunch beverage is the ginger ale made in my hometown of Winchester, KY, Ale 8. It was perfect with my tostada!
