My favorite holiday of the year is this week! It’s both surprising and exciting! I’m surprised because, well, where did March go?! It flew by for me! However, I’m not sad about that! Why? The last week of March took us to New York and Pennsylvania. The last leg of the trip in PA hit me between the eyes when I came down with Flu A. It caused me to miss out on most of a marriage retreat my husband was leading, as well as Sunday services. Those days are kind of a blur, but I remember enough to grimace at the thought. Thank the Lord for healing, home, and chicken noodle soup!
A few weeks ago, my daughter asked if I minded if she hosted Easter this year. Her family moved into a lovely country home this year, and she felt excited about having everyone there to celebrate the resurrection. Of course I agreed, and now I see the Lord was going before me, knowing I would just be recovering. So this year, I’m simply making a couple sides to take to the meal. That means I can focus on what I really think everyone would enjoy.
I love a roll whose dough can be made ahead and frozen, taking away the last minute flurry. So I’m making these Make Ahead Butterhorns that are so delicious!
An easier recipe that tastes like Sister Shubert rolls can be found here. They make a lot, so I typically halve the recipe.
It seems like Jello salads are making a comeback. I remember some crazy combinations in the past, all that seemed odd, but this Strawberry Pretzel Salad is not odd, but amazing! It has always been a favorite of my family, and I was glad when my daughter told me she’s making this for our Easter dinner! I heard someone say they were going to trade out the strawberry flavor for orange for springtime. That sounds delicious!
Corn Casserole is kind of on my radar for one side dish I’ll make for Easter. This takes corn to a whole new level! Another delicious vegetable casserole is Corn Broccoli Scallop.
Easter desserts are many and varied. Our family has typically had Coconut cake, Lemon Meringue Pie, or Coconut Cream Pie.

Easter is the BEST day because it is the day that gave us our solid hope in Christ. He arose – unlike any other one who declared themselves to be the Messiah. All the hard things, but crisis, the death, the sin, will all come to an end when we who know Christ are gathered in His presence! Come quickly, Lord Jesus!

I pray that this week before Easter will fill your heart anew with the hope of Christ! I plan on reading the Easter story all through the week to remind myself of all Christ endured on my behalf. My favorite words in Matthew 28 are “He is not here!” 🙌

I hope you are feeling so much better! Sorry you missed your husband speaking. So he leads marriage retreats? I have wanted to go to one for so many years but my husband never agrees to go. Pray about that with me!
