Bite-Sized Pumpkin Pies

Last week we sat down with the half of our family that lives near us to have an early dinner that resembled Thanksgiving. I served Turkey breast, Individual Sweet Potato Casseroles, green beans, Frozen Cranberry Fruit Salad and Hawaiian rolls. We all looked forward to the turkey breast and sides, but also the Pumpkin Pie. One author said,

Rather than making one big pie, I made mini ones. How small were they? Well, I made them in mini muffin tins. I loved them because you get pie crust all the way around the filling! They were the perfect little bite of dessert! Well, we may have had more than “one bite,” but you get my drift! They were so easy to make!

I baked a bunch of these earlier and then froze them. The day I needed them for my family dinner, I let them thaw in the fridge. That was a great time saver!

To make the mini pies, I simply used a small biscuit cutter (you could also use a small glass) and cut rounds a little bigger than the bottom width of the mini muffin tin so the crust will come up the sides of the pan.

I placed the crust in a pan sprayed with cooking spray. I used a little round Pampered Chef tart shaper to push the crust into the tin. You could press it in with your fingers, if you don’t have a tool like that. The pie filling was then poured into the shells and baked. I baked mine about 25 minutes. If you will eat them right away, simply cool and store in fridge. Top with whipped topping.

Even if you’re not a pumpkin pie fan, we can all agree that no matter what we eat this week, we have SO much for which to be thankful! It begins with the Lord Jesus, our Savior. He makes this life worth living and eternity something to long for! How could we ever tell Him enough how thankful we are for His love and sacrifice for us? We’ll have all eternity to do just that!
