Breakfast is not often drooled over, but oh my goodness, I recently made a breakfast sandwich that is worthy! I have a Cooking Light Cookbook where I found this delicious sounding breakfast sandwich and knew I wanted to give it a try. It starts with Cinnamon bread as the base. That’s a great beginning, and I love making it with my sour dough bread starter. This Cinnamon Swirl Bread would be another wonderful bread to use for this sandwich!
I buy a Goat Cheese at Aldi that has honey added to it and it was perfect for this recipe. To the softened cheese you add honey and lemon zest (I used orange zest and it was so good!). After a layer is spread on the bread, you spread Fig preserves over the cheese. The sandwich gets a light spray of cooking spray and then is grilled. The cheese is soft and gooey and the preserves give it a lovely sweetness. This was delicious!! Here are the details…
Honey Goat Cheese and Fig Preserves Breakfast Sandwich
4 oz. Goat cheese, softened
2 tsp honey
1/4 tsp lemon (or orange zest)
Fig preserves
Cinnamon Raisin Bread
Blend the first three ingredients in a small bowl. Spread a couple tablespoons on each slice of bread. Add a layer of Fig preserves over the cheese.
Spray the bread lightly with cooking spray. Grill in pan on both sides until bread is browned and the cheese is melty.
Sprinkle with powdered sugar.
This could easily become a favorite breakfast for me! If you try it, let me know what you think!

Denise this looks amazing! And the fact that you used your homemade sourdough cinnamon bread must have taken it up a whole notch! I also get the honey goat cheese from Aldi but I haven’t thought of adding orange zest. Great idea— perfect for winter! 🍊 ❄️
