About two weeks ago, I posted a little video on Instagram of lunch being made. I fixed a Turkey Sloppy Joe that day. It’s such a great midday meal! I found this healthy and hearty Sloppy Joe recipe on the Weight Watchers site. It makes a lot, so I know I have many servings ready! This is great for fixing for a group, or just your family’s weekly lunchtime. Don’t let “Weight Watchers” make you leery! This is simply lower in calories because it’s made with ground turkey. The flavors are incredible!

Turkey Sloppy Joe’s
Here’s the recipe:
Turkey Sloppy Joe’s
2 tsp Olive oil
1 small onion, chopped
Celery, 2 ribs, chopped
Bell pepper, chopped
1 pound ground turkey
1 Tbsp Chili Powder
2 tsp Dried basil
1/2 tsp salt
1/4 tsp Pepper
20 oz. Canned crushed tomatoes in tomato puree
1/4 Cup Ketchup
1 Tbsp Dijon mustard
1 cup Frozen corn
Mixed Grain hamburger bun
- Heat oil in a large nonstick saucepan over medium-high heat.
- Add onion, celery and bell pepper and saute’ until tender, 3 minutes. Add turkey and saute’ until browned, breaking up the meat as it cooks, 5 minutes. Add chili powder, basil, salt and black pepper; stir to coat. Add crushed tomatoes, ketchup and mustard; mix well.
- Bring mixture to a boil, reduce heat, partially cover and simmer, stirring occasionally, 30 minutes.
- Stir in corn and simmer 2 minutes to heat through. Spoon mixture onto rolls and serve hot.
I often eat my sandwich open-faced, reducing the calories, but not the deliciousness!
