Today’s recipe isn’t true pumpkin, but did you know that al the squashes are in the pumpkin family? I have google to back me up on that! The blessing of this recipe is that you can have your favorite “pasta” without all the carbs, and believe me, you won’t miss them. I’ve tried other substitutes like riced cauliflower and am not really a fan. However, I have really gotten into using squash in place of pasta. Remember my lasagna?
Now I’ve added the spaghetti squash to our menu!! A good crock pot full of spaghetti is hard to beat on a busy day. It’s so satisfying and filling. But to find a recipe with as much comfort and less carbs is a winner in my book! Recenlty Relish magazine shared a recipe for Slow Cooker Spaghetti Squash with Turkey Meat Sauce. I just happened to have ALL the ingredients on hand, so I whipped it together within minutes and supper was promptly ready four hours! I didn’t even have to boil noodles! This was really good! My husband loved it, too. I’m thinking as long as spaghetti squash is available, we won’t be having the noodle version!
Here’s the recipe:
Slow Cooker Spaghetti Squash
1# Ground Turkey
1 23.5 oz. jar marinara sauce
Diced mushroom
Small white onion, diced
Minced garlic clove
1/4 tsp pepper
1/2 tsp oregano
1/2 tsp dried basil
1 3# Spaghetti Squash
Directions:
Heat 1 tbsp olive oil in a large skillet over medium high heat. Brown Ground turkey; add to slow cooker. Add marinara sauce; diced mushroom, onion, garlic, pepper, oregano and basil to the slow cooker. Stir to combine.
Cut squash in half, lengthwise and remove seeds with a spoon. Nestle squash cut-side down into sauce in slow cooker. cover and cook on high 4 hours. Do not open the lid during the cooking time. Remove squash from slow cooker; loosen strands with a fork; spoon sauce and fresh basil on top. Serves 4
I didn’t feel guilty about having a half slice of bread since I was cutting carbs in the spaghetti! Oh, and this warmed up great the next night!
