Cherry Coffee Cake

Happy October! Fall is a season of comfort foods and delicious coffee cakes enjoyed with mugs of steaming coffee. Today I’m sharing a new recipe recently introduced to me that will perfectly fit those autumnal menus.

Last week our small group had a fellowship dinner. We decided the theme would be Breakfast for supper. A couple of our dear friends from out of town were going to be here to join us and she wanted to make something to contribute to the meal. Her recipe was a hit with everyone! Cherry Coffee Cake was her recipe, and it tastes like a cross between a pastry and a cake. You could substitute another fruit topping, but I’m telling you that the cherry was so delicious! Cherry Coffee Cake

INGREDIENTS  

For the coffee cake:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • ½ teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • ½ teaspoon salt
  • 1½ teaspoons baking powder
  • 1 (21 oz) can cherry pie filling

For the icing:

  • 1 1/2 Cup powdered sugar
  • 1/2 tsp. vanilla
  • 2 Tbl melted butter
  • 3 Tbl. warm milk

INSTRUCTIONS 

  • Preheat oven to 350°F. Grease an 11×17 inch pan with cooking spray.
  • In a large bowl, cream the butter and sugar together until soft and fluffy using a hand mixer. Add eggs, almond extract, and vanilla extract, and beat until combined.
  • Stir in the flour, salt, and baking powder just until combined.
  • Reserve 1 cup of dough. Spread the remaining dough in an even layer in the greased 11×17 inch pan. (An offset spatula helps to do this easily.)
  • Pour the cherry pie filling on top and spread it evenly over the dough.
  • Take tablespoons of the reserved dough and dot it over the top of the pie filling.
  • Bake for 30–35 minutes, or until golden brown on the edges and cooked through. Let sit until cool.
  • In a small bowl, whisk together the glaze ingredients. Drizzle the icing over the coffee cake. Serve right away!

You could make this cake ahead of time and freeze it. It will feed a crowd, so if you’re just making it for your family, you could cut slices and freeze squares of it, separating each piece with waxed paper and stack them in a freezer bag. Then when you need a slice, it would be easy to pop out one or two!

Whether you make this for breakfast, brunch or dessert, I can almost guarantee you that this Cherry Coffee Cake will be devoured!

  2. OH my gosh, Denise! I got this recipe a long time ago from my sister-in-law. I made it many, many times using the cherry, apple and lemon fruit for toppings. The nice thing about this recipe is how easy it is to make and it will feed a lot of people. Thanks for sharing.
    I just think that is such a fun idea. I would like to know to know what are some of the other dishes your group brought for breakfast for supper.
