What I’ve Been Cooking

During this summer of eating camp food that teens love (aka, tacos, hot dogs and Mac and cheese), I’ve enjoyed coming home and making some warm, comforting meals. I’ve posted these on my blog in the past, but if you’re new here, or if you haven’t made these recipes in a while, here’s your reminder! These will satisfy your craving for “real” food with minimal effort!

Who can turn down a creamy pot pie? Not me! This recipe for individual pot pies is great because you can make these ahead and freeze them for a busy day. All you have to do is pop them into the oven to bake! When I made them this week, I used Puff pastry instead of making a crust. That made it even easier, and also so delicious!

My husband usually has a hard time coming up with a suggestion for dinner options when I ask him what he’d like to have. However, he recently asked me if I would make Pinto beans, cornbread and fried potatoes. I gladly obliged! It’s a favorite meal of our entire family. This shortcut method is so easy and tastes just like Cracker Barrel’s delicious beans!

The last recipe I’ll share that I made recently was pizza. While they did serve pizza at camp, it was on Monday night and we arrived each week on Tuesday. We absolutely love this recipe for grilled pizza dough. The dough is the easiest pizza dough I’ve ever made, and when you roll it out nice and thin and then grill it, it gets crispy and delicious. If you want to make your own sauce, you may have all the ingredients for this recipe in your pantry right now.

For the pizza above, I used barbecue sauce, grilled chicken breasts, red onion and pineapple. We love that combination!

If you can’t think of anything to make for supper, I’ve just given you three great ideas! You won’t be sad you made these!

  1. We love the grilled pizza but have trouble with getting the toppings “done” (melted) without the crust blackening. We have tried grilling at a lower temperature but it didn’t work. Did you ever have this problem?

    1. Yes, lowering the temperature is helpful. Do you lower the lid on the grill? When I do those two things it works well. Maybe it would be helpful if you under-baked your pizza crust a little bit before you put the toppings on. Hope this helps!
