A sweet little coffee cake with breakfast is a special way to start the day! I have some tried and true favorites, like
Last week I had the urge to make a new recipe, so I went looking for another coffee cake to add to my collection. I found a 1997 Southern Living magazine page neatly folded and tucked into the safety of my recipe box! As I unfolded this treasure, I found two cake recipes waiting to baked! They both looked delicious. The decision as to which I should make was an easy one. As I read the ingredients, I realized that I had everything necessary to make the Banana Sour Cream Coffee Cake.
The cake batter whipped together in no time, and after baking, it produced a very moist cake with a delicious cinnamon, sugar and nut streusel on top and in the middle of the cake. Here’s the recipe:
Banana Sour Cream Coffee Cake
1 1/4 cups sugar, divided
1/2 cup chopped pecans
1 tsp cinnamon
1/2 cup butter, softened
2 large eggs
1 cup mashed banana – (I always keep brown bananas in my freezer for baking)
1/2 cup sour cream
1/2 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
- Stir together 1/4 cup sugar, pecans, and cinnamon; sprinkle half of mixture in a well-greased 12-cup Bundt pan. Set remaining mixture aside.
- Beat butter at medium speed with an electric mixer until creamy; gradually add remaining 1 cup sugar, beating 5-7 minutes. Add eggs, 1 at a time, beating just until yellow disappears. Add banana, sour cream, and vanilla, beating at low speed just until blended.
- Combine flour and next 3 ingredients; fold into butter mixture. Pour half of batter into prepared pan; sprinkle with remaining pecan mixture. Top with remaining batter.
- Bake at 350° for 45 minutes or until a long wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes; remove from pan, and cool on wire rack.
This makes a great addition to breakfast or brunch! Add this one to your collection!
