Shrimp Kabobs

There’s just something about grilled shrimp that makes supper feel a little more special without a lot of fuss. It’s quick, light, and packed with flavor – perfect for those evenings when you want a meal that feels like summertime, even if you’re just cooking on the back porch. Toss a few skewers on the grill (or Ninja grill, as I did), add your favorite seasoning or marinade, and in minutes you’ve got a dish that’s easy and impressive!

I found this recipe in my Kroger coupon booklet and knew it would be the perfect menu item for a quick supper on a weeknight. It was delicious and super easy!

Of course, you can modify the recipe to suit your likes or what you have on hand. I didn’t have the pineapple, which would be good, but it was fine without it.

Here’s the simple recipe…

Shrimp Kabobs

Ingredients

  • 12 wooden skewers
  • 1 lb. Private Selection™ Raw Extra Large Peeled & Deveined Wild Caught Argentinean Red Shrimp
  • 1 pkg. (10 oz.) Private Selection Petite Grape Snacking Tomatoes
  • 3 Private Selection Golden Pineapple Spears, cut into large chunks
  • 1 medium red onion, cut into large chunks
  • 1 yellow bell pepper, cut into large chunks
  • Olive oil
  • Salt
  • Black pepper
  • Smoked paprika
  • 2 cups cooked rice
  • 2 cups chopped cilantro
  • 6 Tbsp. teriyaki sauce – If you don’t have this on hand, see my recipe below)
  • 2 Tbsp. Private Selection Sesame Seeds

Teriyaki Sauce

1/2 cup soy sauce
1/4 cup salad oil
2 tbl molasses
2 tsp ground ginger
2 tsp dry mustard
3 cloves, garlic, minced

This sauce is perfect for the shrimp, but also good on steak! Why not try some steak kabobs, too?! So delicious!
