A Recipe for Healing

I’m setting aside my “normal” Monday post and opting to share from my heart. You see, today is a bittersweet day for my family; it is the year anniversary of my dad’s homegoing. If you’ve never lost a loved one, you may be tempted to scroll on, and I understand, but I need to reminisce a bit about this year of God’s goodness and the healing He has brought during grief.

The hardest times have hit when I’ve been in places where my dad had been – in their home, his garage work area, and a Gospel concert. So often I have pictured him in all those places and how he would have responded and what he would have said. Some of those memories brought laughter, some a tear, but both were healing.

What We’re Doing – Including the Appalachian Trail!

If you know anything about my husband, you know that he LOVES to hike. One of his life-long dreams has been to hike the Appalachian Trail. He has done plenty of sections on the trail, but certainly nothing close to the whole thing.

If you know anything about me, you know that sleeping on the ground in the cold and eating dehydrated food with the possibility of bumping into a snake on the path is NOT my idea of a fun day! But recently I stood before my husband and I told him I would DO the Appalachian Trail with him and I meant it!

When I was in elementary school, I had a fascination with matches and fire. That led me to doing a very foolish act one day. I struck the match that I had been forbidden to touch and lit one strand of a pom pom that I had in my bedroom, thinking it would slowly burn up that strand of crepe paper!

Blueberry Buttermilk Breakfast Cake

I recently had the blessing of having my daughters over for a leisure Saturday breakfast. We are all “foodies.” Google defines a foodie as “one who has refined interest in food!” Our belief is that we don’t want to just eat something – we want it to be delicious. Mealtime is an event! I wanted to make it a little special!

I looked through my recipe index here on my blog, and when I saw this Buttermilk Blueberry Breakfast Cake recipe, I knew it would be the perfect addition to the rest of the meal. I wanted savory and sweet, and this was a nice addition to the egg dish I was making. This cake is fluffy, moist and full of flavor.

Here was my menu:

Grits
Buttermilk Blueberry Coffee Cake
Fresh Fruit with yogurt and Peanut Butter Granola

Fun Discoveries of Things I Love!

I love coming across good ideas or products that ease my workload. I’ve recently discovered or re-discovered a few things that I’ve been enjoying that might help you, too!

Many recipes call for buttermilk in the list of ingredients, and it really does enhance the flavor of baked goods! However, I don’t usually keep it on hand because it can be expensive, and you can’t just purchase a cup of it!
