God’s Amazing Grace Extended

There’s a snapshot, a “MentalGram,” if you will, in my mind that probably will never be forgotten.

The man seated here was the driver of the car who hit our daughter and son-in-law nearly head-on in February.

This event/picture took place this week as we came to the courtroom for the final hearing and sentencing for this man who nearly took his own life, and that of two young people, because he was foolish enough to

  1. Drink alcohol
  2. Get behind the wheel of a car drunk

The “picture” progresses as I walked towards him and the Holy Spirit nudged my heart to speak to him.  Oh, I’d had had LOTS of conversations in my mind with him since the moment I learned of the car crash!  I’d given him a piece of my mind, telling him sharply exactly how I felt about a man who was so desperate that he would disregard anyone else and selfishly risk others’ lives so he might have a little pleasure!   But now, upon the impression of the Spirit of God, I stood before him, alone.

I had wondered what he’d look like.  How old he was.  Now here I was standing in front of him, seeing the answers to my questions.  He looked distressed.  He looked old.

I called his name.

He looked up, inquiring.  “My name is Denise.  My daughter is the young woman in the car that you crashed into.”  He reached out and shook my hand, tentatively.  “I came to tell you that while I hate what you have done, I do not hate you.  What you said in the courtroom about it being a miracle that you’re alive?  It is true.  I believe God has allowed this for a purpose that you might come to know Him.  If those two young people would’ve died, they have an assurance that they would’ve gone to heaven.  I’m giving you this to read that you might learn how you can have that same assurance.”

I handed him The Exchange tract.

“Oh, in all the things I’ve lost I’ve never lost my faith,” was his reply.

“Sir, you need a personal relationship with Jesus Christ.  Walk with Him.  Come to know Him.”

He nodded.

I walked away.

I sat later amazed again at God’s grace that would enable me to stand and speak to this man who had brought such pain and suffering to two innocent lives and their families.  I had no strength of my own to do this.  All the credit goes to my Savior – I know what kind of actions and words my heart had dreamed about in the recent months!

Yes, His grace IS marvelous.  It will lead a person to believe on Christ for salvation.  It will also help a believer to extend to others the same forgiveness they have received.
Infinite.

Grace.
 
Have you received God’s grace?  It’s extended to all who believe.
Do you need to extend that grace to others who have hurt you?  It’s possible.  It’s necessary.  It’s freeing. So very freeing.

A Peek From My Porch

A Peek Into My Life This Week

I have so many blessings to share with you today, I don’t know where to start!  This has been a wonderful week, full of seeing God at work.

We got to celebrate Alli’s 23rd birthday.  Fun times.  I reflected on God’s goodness in preserving her life at the time of the car accident in February.  Otherwise, this day would have been quite different.  Thank you, Lord.

Strawberry Lemonade Cake made a reappearance for the occasion! 

Whitney and her husband came in for the weekend so she could attend the Bristol race with her dad. I always love it when they get the chance to visit!  While she was here, I had the blessing of hearing the girls play their instruments together.  Alli got a cello for her birthday, and was excited to have her sister accompany her as she played.  My cup of joy runs over when I listen to them.

It was a blessing to have our dining room table full, with everyone here for Sunday dinner.

 Lastly, it was time to change out my chalkboard.  I love getting to doodle and draw.  It went from this to this…

What’s Cookin’ in the Country?

For a lunch with friends last week, I was asked to bring dessert ~ something chocolate.  Yay!  A chance to bake something new!  I had seen Ina Garten make some little individual cakes on her show recently, and my mind went to those little gems ~ Orange Cakes covered with Chocolate Ganache.  Yes, please!

These are made in forms, but if you don’t have little cake pans, use a cupcake tin.  It’s going to get covered with the chocolate ganache, so it will transform a plain cupcake into something divine!

The recipe is from Ina Garten:

Orange Cakes with Chocolate Ganache
Ingredients
1/4 pound unsalted butter at room temperature
1 cup sugar
2 extra-large eggs at room temperature
1/8 cup grated orange zest (2 large oranges)
1 1/2 cups all-purpose flour plus 1 tablespoon
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon kosher salt
1/4 cup freshly squeezed orange juice
3 ounces buttermilk at room temperature
1 teaspoon pure vanilla extract
1 cup good semisweet chocolate chunks
For the syrup:
1/4 cup sugar
1/4 cup freshly squeezed orange juice
For the ganache:
4 ounces good semisweet chocolate chips
1/4 cup heavy cream
1/2 teaspoon instant coffee granules

Directions
Preheat the oven to 350 degrees F. Grease and flour 6 individual serving baking molds, such as the flexible non stick 100 percent silicone molds.

Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, or until light and fluffy. Add the eggs, 1 at a time, then the orange zest.

Sift together 1 1/2 cups flour, the baking powder, baking soda, and salt in a large bowl. In another bowl, combine the orange juice, buttermilk, and vanilla. Add the flour and buttermilk mixtures alternately in thirds to the creamed butter, beginning and ending with the flour. Toss the chocolate chunks with 1 tablespoon flour and add to the batter. Pour into the pans, smooth the tops, and bake for 30 minutes, until a cake tester comes out clean. Let the cakes cool in the molds on a wire rack for 10 minutes.

If your cakes aren’t pretty at this point, they will be once the ganache is spooned  over them!

Meanwhile, make the syrup. In a small saucepan over medium-low heat, cook the sugar with the orange juice until the sugar dissolves. Remove the cake from the pans, put them on a rack over a tray, and spoon the orange syrup over the cakes. Allow the cakes to cool completely.

For the ganache, melt the chocolate, heavy cream, and coffee in the top of a double boiler over simmering water until smooth and warm, stirring occasionally. Drizzle over the top of the cakes.

If you need a “fancy little cake” for a meal, these are fantastic!  They’re easy and fast to make and are an eye and palate pleaser!

Freshen Up Friday

Isn’t this a happy little mess?!

In all the things that are demanded of us every single day, it’s really, really important that we take time to have a break.  Even 15-30 minutes of scheduled time to do something other than the work before you will refresh you and make you more ready to go back to the normal demands of your life.

I have lots of interests that I pencil into my days.  Playing Words With Friends is something I only “allow” myself to do when I’m in the car, on my way to sleep at night or a when I’ve scheduled a 15 minute time on the swing for a break.

I also love making cards.

The picture above was taken after about 30 minutes of cutting, gluing and punching.  I love that I’m also being productive while taking a break!

We can really get discouraged and down if we don’t take a little time for fun!  Lysa TerKeurst said,

The decisions we make
make the life we live,

So if we want to live better,
we’ve got to decide better.

That would even include deciding to take a little time off.  Away.  Smiling.  Having fun.  Maybe cutting and gluing.  Maybe reading, biking, walking, sipping coffee on the porch, or playing the piano.
You know what you love.  Schedule it.  Do it.  Refresh yourself.  We don’t work so that we can play more, we play (rest) a little so we can work.  A little fun will help you to get back to work.  To be able to work is a blessing, and a little time away is helpful in making us more productive.

Ideas For Making Extra Income

College tuitions brought some belt-tightening to our household when both of our girls headed off to the Christian university.  It wasn’t easy to pay that bill each month, but we were determined that, by God’s grace, we would send them to college and pay the bill for the tuition so that they might finish their years there debt-free.

They were expected to work to pay for their personal expenses, as well as books, which you probably know, can set a person back a good chunk of change!  They did their part, and we did ours.  Praise the Lord, He allowed both girls to finish not owing the school a penny.  It wasn’t necessarily easy, but the sacrifice was well worth it!

During those years, extra money wasn’t available.  Money for gifts and little projects around the house, just wasn’t there.  I began to pray and ask the Lord what I could do to earn some extra money.  I was still homeschooling, so I needed to be able to work from home.  Remembering the biblical principal to do everything with all our might, I knew I had some “might” that could work.  Surely there was something I could do or offer that could stir up some extra income.

The Lord brought my love for baking to mind.  So, I began to bake sweet breads, muffins and pies and offer my goods at my bank, the place where I got my hair cut, and to professional people working at the hospital.  I loved my business, and I saw it really flourish in the years I worked it.

The last year I had my business, I was so busy at Christmas I didn’t even have time to do my own baking.  That’s when it came to a close.  The need was now behind us, and my husband wanted us to have a home life, so I stopped, in deference to him.  But it had served its needed purpose and was such a blessing.  At the time I stopped, I had grown to baking specific orders of cakes, pies, cookies, cheesecakes…you name it.  There was  a need for busy people to hire someone to bake for them, and the Lord had brought that to my mind, given me a love for it, and provided for our family in that way.

Do you have a financial need that you’re praying about?  Think about what you have to offer.  What service do you enjoy doing that others would pay to have you do for them?

  • Do you love to iron?  Most women I talk to hate that task so much they don’t do it, and their family wears wrinkled clothes straight from the laundry pile.  Iron for a part-time job!
  • Do you have knowledge of computers?  There are lots of jobs you could do at home, including web design, or helping small companies get out there on social media.
  • Do you have affinity for pets?  Offer your services to care for people’s pets while they’re away.
  • Childcare is needed for so many families who have to work and don’t want to put their child in a day care.  Offer your home for a newborn or preschooler.
  • If you love to bake like I do, consider starting out with your specialty cake that everyone loves. Then add more items as your business increases.  Seek out professional people near you. Delivering was a perk of my business.  I did it once or twice a week – usually on Friday so folks had baked goods for the weekend.
  • People to do Sewing or alterations are always in need.  If you have skills here, I’m sure you could stay busy hemming, or altering those odd-sized bridesmaid dresses!
  • Look on Etsy and see what crafty things other people are selling.  If you do any of that sort of thing, try your hand at selling your items on-line.
This probably won’t be a full-time salary, but might be enough to help you with the little extras that tend to pop up more frequently than dandelions in the springtime. Try to do something that won’t take you away from your family.  Some businesses can keep you busy doing parties and such; that might make your life more stressful than you’d like.
Pray about it.  Ask the Lord to help you be creative and use the resources and the might He’s given you.  He’ll give you joy as you put your hand to work and labor for those you love.
