Thirty Minute Meal Guide

One day last week when I was out of town, my daughter sent me a cry for help text.  It said something like this:

When I finish teaching lessons, I’m starving.  What chicken recipe could I fix that’s fast?

I went to my blog and sent her a couple links to recipes that I knew could be made in 30-minutes or less.  She made Chicken Piccata, loved it and thanked me later for rescuing her!.

We’ve all been there, haven’t we?  You’re so hungry you’d eat anything in the pantry, but know you should have a good meal, yet you have no clue what that might be.

Today I am sending you a life boat full of food through some quick recipes!  I’ve made a New Category on my recipe page. Just beneath Appetizers you’ll see “30 Minute Recipes.”  I’m only adding entree recipes.  Some are “lunch-like”, others are more hearty.  There are soups, chicken, and some beef.  I’ll continue to add to this list so that you’ll have a whole arsenal of recipes that are fast, delicious, and ready on the table in 30 Minutes or less!

  1. Spaghetti is my go to if I can think of nothing else. I always have the ingredients on hand and my husband loves it. Breakfast suppers are also an easy solution as we have cereal for breakfast most mornings.


  2. At least half the things I make each week are 30 minute meals…I just don’t have a choice! The key is keeping it simple and using recipes that only have a few steps. One of the biggest helps (as you noted on your new section) is to have the meat ready ahead of time. My freezer is always stocked with cooked chicken and ground turkey.


  3. One of my family’s favorites is so quick and easy. Dredge thinly sliced chicken in a mixture of flour, salt and pepper. Sauté in about a tablespoon of butter. When the chicken is cooked through, remove from skillet, and toast ~1/3 cup chopped pecans or slivered almonds in the drippings. Deglaze pan with honey, and spoon the mixture over the chicken. This can be done in 15 minutes.


  4. I love stir fry recipes! I have a beef stir fry and a chicken stir fry that I love. They are healthy, fast, and delicious! I also love to use my stovetop grill pan and grill pork chops with various seasonings–add a few apples or fresh peaches and you have a gourmet meal in minutes!
