If you aren’t much of a baker, or you don’t want to spend lots of time in a hot kitchen, but you want an outstanding dessert for your July 4th gathering, today’s recipe is for you! The whole process is fast and Super simple!! You just need time for the dessert to freeze back up once it’s put together.
This is a Southern Living recipe that I’ve been making for years and it is gobbled up every single time I take it anywhere! It is so easy to make and assemble, and it’s the perfect, refreshing dessert on a hot day!
Caramel Ice Cream Dessert

Combine first 4 ingredients, and stir in melted butter; press mixture firmly into a lightly greased 15 x 10 x 1 inch jellyroll pan.

Bake at 350 degrees for 12 minutes or until lightly browned; remove cookie to wire rack. Cool and crumble.

Combine 1 cup brown sugar, 1/2 cup butter, and evaporated milk in a heavy saucepan. (Add 1/4 teaspoon salt for the salty caramel taste!) Bring to a boil over medium heat, stirring constantly; boil 3 minutes. Cool caramel sauce.

Sprinkle half of crumbs into bottom of a lightly greased 10-inch springform pan. Drizzle with half of caramel sauce. Spread ice cream over sauce. sprinkle with remaining crumbs.

Cover and freeze until firm.

Pour remaining warmed sauce over each slice at serving time.

You could vary the ice cream flavors for this recipe and make some great combinations! I have used Praline ice cream and loved that!! But good ol’ Vanilla tastes fabulous, too, thanks to the caramel and the crunchy crust/topping!!
