Creamy Strawberry Banana Popsicles

When I was a child, I remember the delight of hearing the ice cream truck coming down our street, ringing its bell while playing carnival-like music. We occasionally were able to purchase a treat, but oh how fun when we did! Is summer really summer for a child without popsicles? Okay, it is, but there’s something special about a delicious frozen treat on a hot summer day! The ice cream truck isn’t needed for the treats I’m sharing today!

Homemade popsicles are so easy and are full of good ingredients. Last week my grandson came over for a visit. Wanting to make our time together special, I thought it would be fun for him to make these popsicles. I pulled up the recipe for these treats on Taste of Home’s site, and found that the five ingredients needed were all in my pantry and freezer. He often has to miss out on purchased treats because he is highly sensitive to food dyes, and many of the frozen varieties contain artificial colors. These are all natural ingredients and he was so excited both to make them and to eat them!

Preparing for July 4th Celebration

A “Ham-Fam” Celebration is on our calendar for next Monday! That’s what we call a Cunningham Family get-together! Here was a vacation. Here was a holiday. Everyone was invited to come for the day. Let me share some of our plans with you as we make preparations for a fun day together.

The guest list – We enjoy being together as a family, and as I said, everyone was invited, but let me stop right here and tell you about my expectations as far as my adult daughters and their families are concerned.

Cool Summer Treat

It’s going to be in the 90’s here all week! Ice cream would be a good option every day, but in the desire to keep it healthier, I made some Strawberry Coconut Yogurt Popsicles. They are cold, fruity and just sweet enough for a hot summer day!

Blending everything in the food processor made them smooth snd creamy with a little texture due to the sweet coconut addition. .

Ways to Refresh Your Daily Life

Weeks can be long and days so busy that we feel stressed and strained by Friday. Maybe you’ve come through a tough one with school beginning, or your job or home responsibilities.  My life stays on the go, too, so I try to find ways to have little moments of refreshment that help me stay charged and not overwhelmed each day.

The first way I do that is time in God’s Word and prayer each day.  Without it, I’m literally running on Empty! Right now I’m reading through the Bible in a year.  I also study our Sunday lesson -currently Mark.   Then I try to find little ways to have some bright spots in the week.  Sometimes those times are planned; sometimes they’re pleasant surprises!
