It’s going to be in the 90’s here all week! Ice cream would be a good option every day, but in the desire to keep it healthier, I made some Strawberry Coconut Yogurt Popsicles. They are cold, fruity and just sweet enough for a hot summer day!

Blending everything in the food processor made them smooth snd creamy with a little texture due to the sweet coconut addition. .
My strawberries were very ripe and gave lots of juice. That gave me twice as much Strawberry layer as coconut. Therefore I have tweaked the recipe here so you should end up with equal amounts of Strawberry and coconut. If your berries aren’t super juicy you might consider doubling the Strawberry ingredients. If you have extra mixture, fill ice cube trays and then insert sticks when partially frozen.
Strawberry Coconut Yogurt Bars
Coconut Layer
- 1 cup vanilla Greek yogurt
- 1/4 cup canned coconut milk
- 1 cup sweetened coconut flakes
Strawberry Layer
- 1/2 pint strawberries stems removed
- 1/2 cup vanilla Greek yogurt
Assembly
- Alternating flavors, pour coconut/strawberry mixtures into popsicle molds until full.
- Place the top of the popsicle mold on or insert popsicle sticks.
- Freeze overnight or until solid.

Making popsicles doesn’t have to be exact. Make them using the flavors you love! Be creative and enjoy the summertime heat a little more knowing you can cool off with a frozen treat!

Yum! I love to have frozen treats like that when I get home from work on a hot day – but the ones from the store can be really expensive! These look delicious!

Exactly! One other good thing about these is that they don’t drip like a regular Popsicle. The yogurt helps them stay frozen longer. That means I don’t always wear the evidence of eating one! LOL!
