
I love shrimp any way it comes. Not only is it delicious, it’s so fast to cook! On a hot summer day, shrimp is a great option for supper because the oven will only need to be on a short amount of time!
I recently posted about making Honey-Drizzled Shrimp Tacos for our supper. I was attempting to replicate a recipe we’d enjoyed while on our recent vacation. My version was a little lighter, since I roasted the shrimp instead of frying it. I also skipped the extra aoli sauce. The results were still delicious! Here’s how I made our tacos:
- Place shrimp on a sheet pan. Drizzle with olive oil, salt and pepper. I also used a seafood seasoning I got from a local restaurant. Roast in a 400 degree oven for 7 or 8 minutes, or until the shrimp are pink. (It doesn’t take long!!)
- Meanwhile, place flour tortillas on a sheet pan and spray with cooking spray on both sides. Toast in the oven until slightly crispy.
- Place shrimp, and any toppings you love into the tortilla shell, then drizzle with honey.
With a side dish of a cold veggie salad or a slice of watermelon, you have the perfect summer supper without heating up the kitchen!
