Lunch – Asian Chicken Lettuce Wraps

It’s so easy to get into a rut at lunchtime! The choices get old – a sandwich, a cup of soup. or a hot dog. One day when I was searching for lunch ideas, I found this recipe for Asian Chicken Wraps on the Weight Watchers site and I realized that I pretty much always have these ingredients on hand. I buy a rotisserie chicken from Sam’s Club every couple of weeks and cut the meat off the bones and freeze it. Then when I want to make anything with chicken breasts or thighs, it’s so convenient.

The ingredients for these wraps are few – thigh meat chicken, celery, carrots and Hoisin sauce. Eating them on lettuce makes them lighter, and the crunchy lettuce is perfect! Talk about a quick, healthy lunch menu!

Asian Lettuce Wraps

3 oz. cooked, skinless chicken thigh meat
1/4 C raw carrots
1/4 C chopped celery
1 1/2 Tbl Hoisin Sauce
3 pieces Romaine lettuce
1 tsp lime juice
1 tbl. chopped scallions

Combine chicken, carrot, celery, and hoisin sauce in a bowl; divide between lettuce leaves. Sprinkle with lime juice and scallions; roll up.

This recipe is a great change from the “standard lunch” ideas. The flavors are delicious. I LOVE the flavor of Hoisin Sauce. If you haven’t tried it, it is an Asian barbecue sauce. It’s very flavorful with a slightly sweet taste. You could add Water chestnuts or peanuts to this as well for a nice added crunch.

    1. You wonโ€™t even miss the bread. I made them for a lunch picnic for my husband to me today and he remarked how much he liked it on the romaine lettuce!
