Hosting Small Group Dinner in Our Home

We’re having dinner with our small group this week and I’m excited about the fellowship we’ll share! It’s just the best! Sometimes we struggle finding a theme so the meal will “mesh” together. I suggested we do a Sunday-type dinner with chicken and veggies.

I signed up to bring a chicken dish. I’m opting for this hearty grilled chicken salad. It’s a favorite of ours that I’ve shared before, but I share it again because it’s on my menu this week, AND because it’s so very good and I’d love for it to try it!

Honey-lime Grilled Chicken Salad

Ingredients

For Honey-Lime Grilled Chicken

  • 4 small chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp honey
  • ¼ cup cilantro, chopped
  • zest from a lime
  • juice from a lime
  • salt and pepper to taste

instructions

  1. In a bowl add the Honey lime chicken ingredients; olive oil, honey, cilantro, lime zest, lime juice, salt and pepper. Whisk until smooth.
  2. Place each chicken breast between plastic wrap and gently pound using a meat mallet until chicken is about ½ inch in thickness. Place chicken in a large Ziploc bag and pour marinade over chicken. Marinate overnight.
  3. Grill chicken over medium high heat until cooked through.

For Salad:

Ingredients:

Spring Mix
Sliced Strawberries
Blue Cheese

Place salad ingredients on plate, top with grilled chicken.

Honey-Lime Dressing –

1/4 Cup olive oil
Juice and zest of a lime
2 tsp Honey

In a small bowl, whisk the juice of the remaining lime, the honey and 1/4 cup olive oil; season with salt and pepper.

This is so versatile. Add any fresh fruit you like. I like blueberries, fresh pineapple or mango along with the strawberries. I’ll probably also have Honey Goat Cheese crumbles available for those that would like to add that to their salad. It’s a delicious combination of flavors!

Do you join with others from your church or neighborhood for dinner? How do you choose a menu that everyone can contribute to? Do you just do potluck and have everyone bring whatever, or do you like a theme? I’d love your ideas!
