On Wednesday of this week, August 19th, I marked my 18th blogging anniversary. Wow. I’ve written 3,533 posts in those 18 years. That’s a lot of words! Skillet Roasted Lemon Chicken Recipe
Sometimes when I’ve planned my menu, I get excited about the upcoming meal, because it’s something new that I’m sure will be delicious! This happened recently after I had watched Ina Garten prepare a Skillet Roasted Lemon Chicken on You Tube. It had all the flavors we love, so I promptly added it to my menu…and then did what I frequently do when I make a new recipe – I invited guests to join us for dinner! Ha!
This recipe rivals and maybe even wins over my favorite Katie Brown Chicken recipe that I’ve been making for years! The lemon slices that line the cast iron skillet add so much flavor, as well as the infused olive oil that is brushed onto the chicken skin. Yum!

We’re having dinner with our small group this week and I’m excited about the fellowship we’ll share! It’s just the best! Sometimes we struggle finding a theme so the meal will “mesh” together. I suggested we do a Sunday-type dinner with chicken and veggies.
I signed up to bring a chicken dish. I’m opting for this hearty grilled chicken salad. It’s a favorite of ours that I’ve shared before, but I share it again because it’s on my menu this week, AND because it’s so very good and I’d love for it to try it!

Birthdays and cake just go together! I think it would be a sad celebration without one! When my girls asked me to make a cake for our family vacation and family celebration, I looked at lots of options, then landed on our long-time favorite – Triple Chocolate Cake. I think deciding which cake to make was harder than actually making it! First on the list was making sure I had all the ingredients on hand. That didn’t mean a run to the store because I am enjoying the blessing of occasionally having my Kroger grocery order delivered. I was able to get a rate for being a Kroger Boost member $35 for the year. That allows me to have groceries delivered the next day at no charge. For the most part it’s been wonderful. Why?
- It keeps me home.
- If I forget something, it allows me to add things to my order up to about two hours prior to my delivery time.
- For the most part, I’ve gotten everything I’ve ordered.
However, a happy accident happened when the Devil’s Food Cake Mix didn’t show up in my delivery. I was planning to make the cake layers for the Triple Chocolate Cake on that day. Since I didn’t want to undo the blessing of the delivery, I went looking for a cook chocolate cake recipe that I could make from scratch instead. The happy accident was that the recipe I baked made the Triple Chocolate cake recipe so much better that I’ll never use that box mix again!

What a wonderful Easter weekend we had! The services at church were so special. As we sang some favorite songs, my heart swelled with thankfulness as we worshiped the Lord. We do serve a risen Savior, and because He lives, we can face tomorrow! We saw the Lord in His Word, as we read in Luke that He cares enough to clothe the lilies of the field and He cares even more for the needs of His children. I can trust Him today – the day after Easter, for every need of my life, and so can you!
After church I hosted just my family for dinner. It seems that our travels keep us so busy that we don’t get together nearly as often as we’d like. So it was special for it to be just us so we could chat and get caught up.
But now of course, we must talk about the food…Oh yes!
