We returned home from California yesterday morning where I spoke at Camp Ironwood’s fall ladies’ retreat. It was a wonderful time together. I watched the Lord answer prayers I had prayed, give strength, opportunities to pour into those precious women, and gain many new sweet sisters in Christ. It was a very full four days in every way.
When I got home Sunday morning after flying the red-eye flight from Las Vegas to Charlotte, then Charlotte to Tri-Cities, we walked into the house weary, and also needing a little sustanance. Hmmm, did we need breakfast or lunch? My stomach was hungry, and my whole body was confused! As I considered what I could fix quickly, homemade soup came to mind. I remembered my favorite Chicken and Rice Soup that is the fastest homemade soup ever, yet with flavors that are so comforting. I’ve shared this in the past, but I want to tell you about another shortcut in making this that I just learned about!
A friend recently shared a meal with me that included delicious roasted chicken breast. When I asked how she cooked the chicken, she told me she purchased it already cooked at Aldi! In my recent Instacart pick-up, I ordered a package. I’m confident that this will be a staple in my freezer for times when I haven’t been able to roast chicken myself. Friends, this is so good, and the perfect addition to salads, a quick lunch, or this Chicken and Rice Soup!
This doesn’t come frozen, so I’m assuming you would find it near the lunch meats. If not there, it will be with all the other fresh meats. I took my package and poured it into a gallon Ziploc bag, then froze it, spreading the chicken pieces apart so I could pull out however much I need without having to thaw all of it. This is around $7 – and is worth the convenience!
Chicken and Rice Soup
1 can Cream of Chicken Soup
1 can chicken stock – (a soup can full)
1 cup Cooked Rice (I always cook up rice and have small amounts frozen so it’s ready at a moment’s notice)
1 cup cooked chicken breast.
Mix in a sauce pan and heat until hot.
I try to always have these ingredients on hand. This is the perfect comfort soup for days like we had yesterday when you just need something warm and delicious. It’s also perfect for those days when the flu hits. It’s the gentle food that a body craves!
I have to show you my soup bowl. I’ve had this for a while and absolutely love it. Pooh Bear has been my favorite animated character since childhood, so I have a nice collection of PB things.
With the 100th anniversary of Winnie the Pooh now upon us, I’m ALL in!! This sweet little cup just makes everything even better.
Enjoy some comforting soup on an October day!
