Recently I was trying to think of what to fix for lunch and I opened one of my treasured Barefoot Contessa Cookbooks and found a recipe for a cold pasta salad. It combines some of my favorite flavors – sun-dried tomatoes and Mozzarella cheese. Though I didn’t have every ingredient that was listed, I knew I could improvise and make something very similar to the recipe on the page. I love her recipes and knew it would be delicious.
The results were so good!

We had it for lunch that day and also a couple days after that!
If you like pasta, you’ll want to make this for a side dish or a simple lunch. Here’s her original recipe:

I didn’t have olives or capers and it was still delicious. I added in diced cucumbers. I also used shredded Mozzarella instead of cubed. The dressing made it taste light and almost like summer!
I really love having a salad like this in the fridge. It’s easy to add to a supper meal, or serve as a “good”lunch. ☺️
