Meal plans for This Week

I’m making my menu after being away from home a week and a half. A sweet friend offered to pick up my grocery order for me so I’d have food ready for meals when we got home. What a blessing! Kroger has a super deal right now – $15 off a $75 pick-up order. Love that, too!

Come along while I plan out some of the meals we’ll eat this week!

This big guy is on the menu because we’re hosting our small group for a Sandwich Supper. This will be my contribution to the pitch-in meal. I love it because it has cole slaw added and that makes it creamy and delicious. It will feed about eight, so it’s a crowd pleaser! You can find the recipe here.

I haven’t made Shrimp tacos in a while, so I’m excited to make these again. I make this recipe and put the shrimp in warm tortillas. I like the addition of the honey! So delicious!

It’s grilling season! Yay! I’m going to make this grilled chicken this weekend with baked potatoes and a green salad with blueberries and goat cheese.

For breakfast I’ll also be making a batch of this granola that has become my new favorite recipe. I have several I love, but this peanut butter one is tops!

Peanut butter granola

  • 2 cups oats
  •  ½ teaspoon ground cinnamon
  • ¼ teaspoon sea salt
  •  6 Tablespoons creamy peanut butter
  •  ¼ cup honey (or maple syrup)
  •  ½ teaspoon pure vanilla extract

Instructions 

  • Preheat oven to 325 degrees. Line large cookie sheet with parchment paper and set aside.
  • In a small bowl, mix together oats, salt and cinnamon. Set aside
  • On the stovetop, melt the peanut butter and honey (or maple syrup) together until smooth.
  • Remove from heat and stir in vanilla.
  • Stir in dry ingredients and mix until well combined.
  • Spread mixture on prepared cookie sheet.
  • Bake in the preheated oven for 8-10 minutes; stir. Bake about 7 more minutes, or until granola is lightly browned. (A great way to test for doneness is to remove a small portion of the granola from the pan and set it on the counter. If it hardens as it cools the rest of the granola is done)!
  • Remove from oven and let sit until cooled. Store in air tight container.
