When Kroger recently put shrimp on sale, I know we were soon in store for a fast, scrumptious seafood dinner! I went searching for a great recipe to make this meal really special. When I saw the word, honey in the ingredients for this dish, my heart jumped. I absolutely love this special condiment! Lime is also called for in this dish, and its tartness added the perfect balance to the sweet honey. This sauce over the shrimp is perfect. Oh yum, we were not disappointed!
Here’s the recipe:
Honey Lime Shrimp Recipe
1 lb shelled and deveined shrimp
1 tablespoon olive oil
1 tablespoon melted unsalted butter
4 cloves garlic, minced
3 tablespoons honey
1 1/2 tablespoons lime juice
1 teaspoon lime zest
1/4 teaspoon salt
Rinse the shrimp with cold water. Drain and set aside.
Place olive oil and butter in a skillet. Add the garlic and saute until the garlic is just cooked. Stir in the shrimp. Stir and cook the shrimp a few times before adding the honey, lime juice, salt and lime zest. Cook the shrimp until the honey-lime sauce thickens. Garnish with chopped parsley and serve immediately.
I served the shrimp with coleslaw and steak fries.
My husband raved over this meal, saying it was as good as any seafood we enjoyed while at the beach this summer! I’d have to agree! If you’re a shrimp lover, you need this meal in your life! Do I say that nearly each week when I share a recipe? Probably, but that’s just because I only share the ones we absolutely love!
