Sun-Dried Tomato & Feta Turkey Burger

Eating a burger that is a healthier option doesn’t have to be boring! There are so many great recipes and options to add that make a turkey burger just as delicious as it is healthy!

I recently made a recipe that called for sun-dried tomatoes in olive oil. Wow! These added so much flavor! Creamy feta is also part of the recipe. What great flavor and texture additions they were!

I grilled these on my Ninja grill pan and it seared them up and turned the tomatoes into crispy little bits. The cheese melted down a bit, too, as the burgers cooked. I’m sorry I didn’t get a picture of the burger on the bun; that just may speak for how good it was! This made four burgers. We ate two and I froze the other two for our lunch this week. So, if you follow me on Instagram, I’ll try to post a picture before I devour it!

Here’s the recipe:

For the Burgers:

  • 1 pound ground chicken or turkey *See note
  • 2 ounces crumbled feta cheese
  • 1/3 cup chopped oil-packed sun-dried tomatoes drained with oil reserved
  • 1 tablespoon chopped fresh basil
  • ¾ teaspoon kosher
  • ½ teaspoon ground black pepper
  • 1-2 tablespoons oil from the sun-dried tomatoes
  • lightly toasted
  • In a large mixing bowl, mix ground turkey, feta cheese, sun-dried tomatoes, basil, salt and pepper. Mix gently until ingredients are just combined. Divide into 4 equal portions and pat each portion into a 1-inch burger.
  • Heat skillet over medium heat and add 1-2 tablespoons reserved packing oil from the tomatoes. Heat the oil until it sheens and set the burgers in the skillet. Cook until lightly seared on first side, 4 minutes. Flip the burgers and continue cooking until opposite side has a nice light sear, an additional 3-4 minutes. Flip the burgers over (again) and partially cover the skillet. Reduce the heat to low and cook until the burgers are cooked through and register 160°F when tested with a meat thermometer.
  • Serve with your favorite toppings. We added lettuce and tomato on our burgers. These are so good!

I love it when lunch holds a promise of something delicious, and these burgers certainly fit that bill! I hope you’ll make these for lunch or supper!
