When I have a super busy day in the kitchen making cookies, pies, or prepping for “big” meal to come, I try to have an easy recipe on the menu that comes together quickly for our supper. The last thing I want to do is spend a long time prepping another dish.
I have shared many sheet pan dinners before, but I have a new one today. This one is Salmon, potatoes and broccoli. This was so good, and was ready in less than 30 minutes!

Here’s how I prepare this dish:
Preheat oven to 400 degrees.
Dice up potatoes and place in a microwave-safe dish. Cover and cook until almost tender.
Cover a sheet pan with parchment paper. Place potatoes on one side. In the middle, place salmon filets. Beside the salmon, add frozen broccoli stems and pieces. Drizzle broccoli and potatoes with olive oil. Season all with your favorite seasoning salt.
Place in the oven for about 8 -10 minutes, until salmon is cooked through and potatoes are crisp.

Sprinkle the broccoli with Parmesan cheese.
Plate and enjoy!
I had pumpkin muffins that I had baked and put in the freezer that were a delicious addition to this meal. I never regret preparing ahead of time! This menu can help you, especially during these busy Christmas days. You don’t need to go out; just make a simple sheet pan dinner!
