What says, spring more than lemon-flavor? I love its tanginess, its brightness and even its color. I have many delicious lemon recipes that I’ve used over the years, including Lemon Loaf, Lemon Meringue Pie, Lemon Pudding Cake and Coconut Cake with Lemon Curd. But since you can’t have too many lemon recipes, I recently made a Lemon Muffin that paired well with the Rotisserie Chicken Dinner I served. My husband loved them! They were equally as good served alongside our breakfast the next morning!
Have you ever been making dinner and thought, “What else could I serve with this?” That was exactly what prompted me to search and find this recipe. I pulled out an old cookbook and knew immediately they would be great with my menu. They whipped together in a matter of minutes – another reason they were a good choice.
Lemon Muffins
1/2 cup butter, melted
1 1/2 cups sugar
2 eggs
Grated zest of 2 lemons
Juice of 1 lemon
2 1/4 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
1/2 cup half and half

Glaze
Juice of 1 lemon
Sugar as needed (app. 1/4 cup worked for me)
Grease or spray muffin tins. In medium mixing bowl, cream butter and sugar. Beat eggs thoroughly and add to creamed mixture. Add lemon zest and juice, flour, baking powder, salt, and half and half; continuing to mix until well-blended. Fill each greased muffin cup approximately 2/3 full. Bake in 375 ° oven for “10-20 minutes.” This was what the recipe stated – that’s quite a range of baking time. I found that about 12-15 was about right. Test with a toothpick and you’ll know.
Combine the juice of one lemon and sugar to make the lemon glaze. Mix well until the sugar is completely dissolved. Remove the muffins from the oven and spoon the lemon glaze over each muffin while hot.
Makes 18 muffins
My muffins weren’t huge – by that I mean they didn’t puff up, but that was fine with me. If you want your muffins bigger, make 12 muffins instead of 18 and bake them longer.
