Easter Dinner Recap

What a wonderful Easter weekend we had! The services at church were so special. As we sang some favorite songs, my heart swelled with thankfulness as we worshiped the Lord. We do serve a risen Savior, and because He lives, we can face tomorrow! We saw the Lord in His Word, as we read in Luke that He cares enough to clothe the lilies of the field and He cares even more for the needs of His children. I can trust Him today – the day after Easter, for every need of my life, and so can you!

After church I hosted just my family for dinner. It seems that our travels keep us so busy that we don’t get together nearly as often as we’d like. So it was special for it to be just us so we could chat and get caught up.

But now of course, we must talk about the food…Oh yes!

My platter of turkey isn’t nearly as pretty as Ina Garten’s!

I had a turkey in my freezer that I wanted to roast, but I didn’t want it to taste like the Thanksgiving turkey, so I found a recipe with a Citrus Herb Butter that added a freshness to the flavor of the meat that made it taste like springtime! The gravy I made also had a little citrus flavor, due to adding a little more of the lemon juice to the drippings. So good.

Alli made a Hashbrown Casserole that was scrumptious! Roasted asparagus made us all think we were eating healthy!

The creamed corn from my blog was a hit, and it’s so easy! At the last minute I added a Strawberry salad. These Thirty-Minute Freezer Rolls that taste like Sister Shubert’s are a breeze to make! Seriously, if you’re not a baker, but you want homemade rolls, this recipe is for you!

For dessert I stepped away from the traditional Coconut Cake and made a Coconut Cream Pie and a Frozen Lemonade Pie. One thing I love about the Lemonade pie is that you have it on hand for times when you need an impromptu dessert. It’s so refreshing on a hot day and delicious ANY time!

The weather was perfect all day – sunny and warm. We got to enjoy dessert on the back porch – after my grandsons enjoyed hunting for Easter eggs in the yard. To hear their squeals of delight and see their excitement over this yearly tradition adds a little fun to a very special and sacred day.
