Skinny Chicken Alfredo Pizza

For those times when the craving for a good pizza hits, it’s so nice to find a healthier recipe that removes the guilt! This Chicken Alfredo Pizza is so good you’ll have to remember moderation, but I am pretty sure it will satisfy your taste buds!

I’ll share the recipe that I found on You Brew My Tea, as well as a couple of changes I made to the original recipe.

Skinny Chicken Alfredo Pizza

For the crust, you could either make up this simple 2-Ingredient Pizza Dough which we love, or you could purchase a pre-made dough. I used the Aldi pizza dough that I talked about here. It’s around $1 and is delicious. I have a couple things that will make it easier to use, and even tastier…
1. Let the dough come to room temperature. That way it will stretch out much easier and fit your sheet pan.

2. Crimp the edges a little to make a ledge on the crust, then dust it with a coarse garlic salt seasoning. That made those edges so good!

Ready for the oven
  • ½-1 cup diced cooked chicken
  • ½ cup Light Alfredo Sauce (Try Prego Light Alfredo or Classico Light Alfredo with similar WW points)
  • 1 cup low-fat part-skim mozzarella cheese, shredded
  • ¼-1/2 cup baby spinach

Instructions:
Preheat the oven to 375 degrees.

Spread dough over pizza pan or baking sheet. I used a an 11″x17″ baking sheet. The dough will be thin.

Using a spoon, spread the Alfredo sauce over the dough. You may sprinkle extra Italian seasoning over this, if desired.

Sprinkle the spinach and chicken over the top of the sauce. Spread to make sure there is a little on each piece.

Top with mozzarella cheese.
Bake at 375 degrees for 15-17 minutes or until the top is golden brown and bubbling.

I always keep cooked chicken breasts in the freezer, so when I made this pizza, it came together faster than running out to a pizza place and bringing it back home! The creamy sauce is a really nice change from the typical tomato sauce.
