Because there are just the two of us eating most meals at our house, and because we try to eat healthy most days, I attempt to not keep sweets on hand! But when a celebration comes along, it seems that dessert is a special addition to the meal!
Recently on Father’s Day, I went to Taste of Home’s site to scroll through their recipes created specifically for two. I love that they offer scaled down portions! When I came across a small Peach Cobbler, I knew I had found the sweet treat we would enjoy! This was so easy and had amazing final results!
Peach Cobbler for Two
Ingredients
- 3 tablespoons brown sugar
- 2 teaspoons cornstarch
- 1/4 cup water
- 1-1/2 cups sliced fresh or frozen peaches (I used one whole can of canned peaches)
- 1 tablespoon butter
- 1 teaspoon lemon juice
- Topping:
- 1/3 cup all-purpose flour
- 2 tablespoons sugar
- 1/2 teaspoon baking powder
- Pinch salt
- 2 tablespoons whole milk
- 4-1/2 teaspoons butter, melted
- 1/4 teaspoon grated orange zest
- Vanilla ice cream, optional
Directions
- In a small saucepan, combine brown sugar, cornstarch and the water until smooth. Add peaches; bring to a boil. Cook and stir for 2 minutes. Reduce heat to low; stir in butter and lemon juice.
- For topping, combine flour, sugar, baking powder and salt in a bowl. Stir in milk, butter and orange zest. Transfer hot peach mixture to an ungreased 2-cup baking dish; spoon topping over peaches. Bake, uncovered, at 400° until golden brown, about 25 minutes. If desired, serve with vanilla ice cream.
This was truly a celebration dessert! The crispy topping with the sweet peach filling were so good, but then topped with a scoop of Tillamook Apple Crisp Ice Cream turned it into perfection!! It also made more than two servings for us, so that was a plus!
