Recently my eyes spotted a veggie sandwich on Pinterest posted by Super Healthy Kids, and I was drawn in. The time to make it was minimal. It has an herbed cream cheese on the bread – yum! It didn’t have processed lunchmeat, and is served on whole grain bread, and it’s completely unlike what we normally have. Yes, it checked all the boxes!! I couldn’t wait to try it!
Doesn’t that look good?! It was!! My husband said, “You can make that again anytime you’d like!” It was creamy, crunchy, flavorful and satisfying! Here’s the simple recipe…
Veggie Sandwich with Herbed Cream Cheese
Ingredients
- 8 slices whole grain bread
- 4 slices provolone cheese
- 1 medium avocado sliced
- 1/2 cup pickle slices
- 1 medium cucumber thinly sliced
- 2 medium tomatoes sliced
- 1 carrot grated – I used sliced bell peppers instead
- Lettuce leaves
For the Herbed Cream Cheese
- 4 ounces whipped cream cheese
- 1/4 cup chopped chives and dill
- 1/2 teaspoon garlic powder
- 1 teaspoon lemon juice
- salt and pepper to taste
- Instructions
- In a small bowl, add the cream cheese, chopped herbs, garlic powder and lemon juice. Stir until well combined.
- Lay out bread slices and spread cream cheese mixture on bowl sides of the bread. Next add cheese slices, avocado slices, pickles, cucumbers, tomatoes, grated carrot, and a lettuce leaf.
- Sprinkle with salt and pepper to taste. Sliced the sandwiches in half and enjoy!
I found a Whole Grain Bread at Aldi that is delicious! Here’s what I purchased –
To me, the bread can make or break the sandwich, and this was a total sandwich maker! I think this sandwich would also be good toasted! The Provolone cheese would get melty and yummy and maybe hold the sandwich together a little.
The only down side of this sandwich was it was “slippery!” but if it’s not messy, is it really good?! 😂 Oh, I hope you’ll bump up your lunch menu with this delicious sammie!!
