Easy Chocolate Peanut Butter Rice Krispies Treats

Rice Krispies Treats have been around as long as comic books and the Wizard of Oz. That’s 87 years! Whether or not you’ve been a fan, you have to at least give Peanut Butter and Chocolate Rice Krispies Treats a try! My grandsons don’t love the original recipe, but when we made this version together, they were on board! Seriously, these are so good!

What’s so good about this recipe is that there’s no baking required, and they come together in less than 30 minutes! We had so much fun making these together. They made a lot, so after I sent some home with the boys, we had plenty to take to camp for me to share with some of the counselors.

Chocolate Peanut Butter Rice Krispies Treats

  • 1/4 cup unsalted butter
  • 1 10-oz bag mini marshmallows or 5 cups
  • 1/2 cup peanut butter
  • 6 cups Rice Krispies cereal
  • 1 1/3 cups chocolate chips
  • 2 tsp Coconut oil
  1. Line a 9×13 inch pan with parchment paper so the bars lift out cleanly later.
  2. Melt the butter in a pot until it turns golden, then stir in 1/2 cup peanut butter and the marshmallows until the mixture just starts to boil (this the trick to keeping the treats soft instead of dense).
  3. Take the pot off the heat and fold in the Rice Krispies cereal until every piece is coated, then press the mixture evenly and firmly into the pan.
  4. Melt the chocolate chips and coconut oil in the microwave (don’t overheat) and spread the topping over the cereal layer.
  5. Cool at room temperature (do not refrigerate these or they will harden) and let the chocolate harden. Slice into squares.

These make great treats for lunches or mid-day snacks! Enjoy
