Most mornings my breakfast consists of Greek yogurt, fruit and granola. But about once or twice a week I’ll make something warm and a little more filling. Last week was a new recipe that was delicious, substantial, but also light!
I found a recipe for a Hash Brown Casserole with Turkey Sausage and Cherry Tomatoes in my Cooking Light Cookbook. It suggested serving it as a side dish for a casual meal, or a main dish with coffee and fresh fruit at breakfast or brunch. I put it on my menu to serve for breakfast, and it made enough to freeze half and use the rest for a few breakfasts for my husband and myself! This is what I’d prepared when a friend came over for our bread-making lesson. She enjoyed it, too!
Here’s the recipe:

Sausage, Cherry tomato, and Hash Brown Casserole
1/2 cup chopped onion
1 pound turkey sausage
1/2 cup water
1 tbl. tomato paste
1/4 tsp salt
3/4 tsp black pepper, divided
7 cups frozen hash browns (shredded or diced), partially thawed
1 cup shredded part-skim mozzarella cheese
Cooking spray
20 cherry tomatoes, halved
1/2 cup chicken broth
2 tbl grated fresh Parmesan cheese
- Preheat oven to 350°,
- Combine sausage and onions in a large skillet over medieum heat. Cook until browned, stirring to crumble sausage. Stir in 1/2 cup water, tomato paste, salt and 1/4 tsp pepper. Remove pan from heat. Add potatoes and mozzarella; toss well. Spoon potato mixture into an 11″ x 7″ baking dish coated with cooking spray. Set aside. Wipe pan dry with a paper towel.
- Place pan over medium-high heat. Lightly coat pan with cooking spray. Add tomatoes to pan; cook 3 minutes or just until heated. Arrange tomatoes over potato mixutre. Drizzle with broth, sprinkle with 1/2 tsp pepper. Cover and bake at 350° for 30 minutes. Uncover; srpinkle evenly with Parmesan cheese. Bake an additional 15 minutes, or until lightly browned. Yield: 10 servings.

One morning I served this alongside scrambled eggs. Another day I made a fried egg (as pictured above) and placed the egg on top of the serving of hash brown casserole. Both were delicious!
Of course a good bread is perfect alongside a breakfast like this. The sourdough bread is tasty, but a sweet bread like New York Crumb Cake or French Breakfast Puffs would also be a special addition to this breakfast or brunch!
I love having a breakfast dish like this in the fridge to pull out on busy mornings! I hope you’ll try it!
