You’ve heard the phrase “Necessity is the mother of invention?” I’ve been living proof of that this week. I need to get some baking done, but I want to use up some ingredients that I have on hand, as I mentioned on Monday. I have cherries, pretzels and candy canes. I also had several boxes of cake mix that I wanted to use as well as leftover Buttercream icing from the wedding cupcakes. So, I came up with my version of a Peppermint Mocha Cookie. They are a lovely mix of chocolate and mint – two of my favorite flavors! They are so very easy to make too.
Peppermint Mocha Cookies
1 Box chocolate cake mix
2 eggs
1/2 cup oil

Mix well. The batter will be stiff. Roll into balls a little large than a quarter and place on greased cookie sheets. Bake at 350 degrees for 8 minutes. Let cookies cool on baking sheet a few minutes, then transfer them to a cooling rack. Cool completely.

Make up a batch of buttercream icing. Pipe or spread icing onto one cookie. Top with another cookie then roll in crushed peppermint candy. Let icing harden before storing in containers.
Makes about 1 1/2 dozen
