What’s Cookin’ in the Parsonage?

After all the traditional Christmas foods are served, I’m always ready for a good Mexican meal. 
Here’s a yummy Mexican recipe provided by my guest posting daughter, Whitney. Enjoy!
 

Pinterest has provided me with so many great new recipes! Here’s one I’ve made a couple times, Mexican Casserole (original link here). This recipe is great because you can modify it to suit your family’s taste. It’s very forgiving! My only caution is that it doesn’t reheat very well – so just go ahead and eat it all in one sitting. I know you’ll want to. =)

Mexican Casserole

Ingredients:
1lb ground beef
1 (1 ¼ ounce) package taco seasoning
1 (15 ounce) can refried beans (I substitute black beans that I puree in my food processor)
2 cups Colby jack cheese
1 cup salsa
1 tomato (chopped)
2 cups corn chips (crushed)

Step 1: In a large skillet brown ground beef and drain. Add taco seasoning and cook according to package directions by adding the amount of water stated on the package. Set aside. Heat refried beans in a medium sauce pan over medium heat until hot. Stir in 1 cup of cheese and 1 cup of salsa. Stir until combined.
Step 2: Place crushed corn chips onto the bottom of an 8×8” casserole dish. Pour the bean mixture over the chips in the casserole dish. Add taco meat on top of the bean mixture. Sprinkle the remaining 1 cup of cheese on top of the taco meat. Sprinkle green onions and black olives over the cheese.
Step 3: Bake in the oven at 375 degrees until the cheese has melted and the casserole is heated through. Take out of the oven and sprinkle with chopped tomatoes.
Yield: (4 Servings)

Freshen Up Friday

So you’ve had the big turkey dinner, turkey sandwiches, turkey soup and turkey goulash and now you don’t care if you ever eat turkey again, right?  How about a total change this weekend and fix a good ol’ hot dog for lunch today or tomorrow? 

Now, don’t just throw a hot dog in the microwave and then slap it into a cold bun!  First, put the hot dog in a skillet and let it get a little browned (unless you have a bonfire roaring in your backyard – that would be even better!).

Now, either spray the bun with a little cooking spray or brush with melted butter.

Place the inside of the bun face down in the skillet and let it get a little toasty – like this…

Flip it over for just a few seconds, then place the browned hot dog inside the bun.  Now you can top it with chili and coleslaw (our favorite!) or some mustard and ketchup.
                                                  
                                                  

Maybe you already toast the bun like this, but I’ve learned that a yummy toasted bun takes a hot dog (or a hamburger) to the next level!  Plus it’s a nice, long cry from a turkey sandwich!

So go ahead and Freshen up your lunch with a hot dog fixed to perfection!

Don’t Regret Today

“We were going  to do this”, and “We planned to do that, but it just never happened!” 

Have you found yourself saying that about things you had thought you might do this December?  I opened my Bible to Proverbs 27 and the first verse I read this morning was,

Boast not thyself of to morrow; for thou knowest not what a day may bring forth.
 
I found myself nodding my head vehemently and thinking, “Boy, that’s the truth!”
 
Just yesterday, I got up feeling well and thought I’d tackled a bunch of projects.  Things were going well until about 10am when my bones started hurting.  My fingers ached, my ribs hurt, then a headache began about the time the cough started.  Oh no, the dreaded flu!  I was down all day and night.  Gone were the things I’d hoped to do.  At this point I didn’t even care that my “to do” list was untouched!  Just give me some Tylenol, a blanket and some ginger ale, please. 
 
This morning, thankful that the body aches were gone, I was able to get up and start the day, albeit, cautiously.  It’s easy to make plans, but I must learn to realize that the Lord is in control.  Even when it doesn’t make sense to me.  I might easily rationalize, “But I’m the primary care-giver for my mother-in-law right now!  I have to be well!”  Really?  Evidently the Lord didn’t think so, or He wouldn’t have let me get sick.  We often think our plans are best, and it will all go as we see fit, but if we’re wise, we’ll sift our schedules, our ideas and plans all through the sovereign hands of an All-wise God.  We must accept what He allows in our tomorrows.
 
Whatever it is that you planned on doing in December, whether it was a drive to see the spectacular lights, or make that awesome cookie recipe, or create the centerpiece for your Christmas table, it is really okay if it didn’t happen.  Don’t give yourself a guilt trip over it.  It won’t change the world.
 
The flip side of that verse is the understanding that while we can’t change the past, or boast about tomorrow, we do have today!  So hey, live it to the hilt!  If you’re feeling well, enjoy it!  Use your energy wisely and pour it out on those you love!  Share the Gospel today!  Make your dinner meal special today!  Tell your family you love them today! Be creative today! 
 
You can’t change yesterday or stop what will come tomorrow, but you don’t have to regret the present!

Everyone has to sign it in pencil, then I embroider their signature and/or drawings
and it becomes a special remembrance of each Christmas we spend together.

What’s Cookin’ in the Parsonage?

It’s Christmas Eve!  I’ll bet there are all kinds of yummy smells coming from many homes today!  I made my traditional Senate Bean Soup on Saturday; we’ll enjoy that tonight.

We’ll also have this Cheese Ball. I make it every year.  This recipe came from my Kraft Cookbook years ago.  It’s very simple to put together and is so good.  I can’t think of trying another recipe!

For Sunday dinner yesterday I made a recipe of my mom’s that is a showstopper, in my opinion.  It’s called Herbed Chicken Breasts.  If you can look closely at the picture above, you’ll see this fantastic herb cream cheese filling oozing out of the chicken.  This makes the chicken breasts moist and packed with flavor.

Here’s how it’s done:

Cut a pocket in 6 boneless, skinless chicken breasts. 

Create the cheese filling:
1/2 tsp (I use more) parsley, sage, rosemary, thyme
1 Tbl lime juice (I only had lemon today and it was great)
1 8 oz. pkg cream cheese, softened
Mix well.
Put cheese mixture into each pocket of chicken breasts. 

Mix:
1 egg
1 Tbl milk
Dip each piece of breast in egg wash, then roll in soft bread crumbs (I used Panko)

Melt 3, 4 Tbl margarine and 2,3 Tbl of olive oil over medium heat.  Brown each breast in skillet until nicely browned on each side. 

Transfer to baking sheet and bake 40 – 45 minutes in moderate oven, 350 degrees.  To bake this while I was at church, I covered the baking sheet with foil and baked it at 250 degrees for 2 hours.

You may not need this recipe today, but you’ll want it for a New year’s dinner party, or sometime you want to make something really special.  I served this with baked sweet potatoes and green beans.  Yummo…wish there was leftovers.  Ha!  There was NONE left! One taste and you’ll know why!
