Don’t let that gorgeous view distract you from that delicious bar!  Read on to find the recipe!

I had the blessing of attending a summer-long Bible study with my small group from church.  We used the book, Lies Women Believe  to draw us closer to God, His Word, and His Truth.  My eyes were opened to many lies I didn’t even realize I was believing!  If you haven’t read this book, I would highly recommend it!  Get a highlighter and a notebook and record what God is teaching you! There were about 12 of us that studied together this summer.  What a blessing our weekly times of study and fellowship were!

To wrap up our study, we met last week for dinner in the home of my dear friend, Sue.  She made some incredible Chicken Salad and the rest of us brought side dishes to go with it.  We had a scrumptious meal!

My contribution was dessert.  I needed to make my dish the day before  because I was going to be out of town the day of the dinner.  I went looking for a bar of some sort that would be delicious and do well the next day.  Can you ever go wrong with something that has chocolate chips in it and resembles a cookie?  I don’t think so!  I found a recipe for Oatmeal-Chocolate Chip Bars and tweaked it a little to suit my needs.  These were quick to pull together! They got rave reviews from my small group, and several asked for the recipe, so let me do you all a favor and share it with you, too!

This is basically a Chocolate Chip Cookie Dough with oatmeal added and then spread into a 9×13 pan. So much easier than dropping cookies onto a cookie sheet!

Oatmeal-Chocolate Chip Bars

Ingredients
  • 1 cup butter , room temperature
  • 1 cup light brown sugar , packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 1/2 cups all-purpose flour
  • 2 cups old-fashioned rolled oats
  • 2 cups chocolate chips semi-sweet
Instructions
  1. Preheat oven to 350 degrees F. Lightly grease a 9 x 13 in. pan with cooking spray.

  2. In a large mixing bowl beat together the butter, brown sugar, and white sugar until smooth and light.

  3. Add the eggs one at a time, mixing after each addition. Add the vanilla.

  4. In a separate bowl combine the dry ingredients: salt, baking soda, baking powder, flour, rolled oats, and 1 cup chocolate chips.

  5. Add to the butter mixture and stir until combined.

  6. Spread the cookie dough into the bottom of the prepared pan. Sprinkle remaining cup of chocolate chips on top.

  7.  Bake for 25 to 30 minutes or until golden brown. Allow to cool completely before cutting.

     

Maybe you should get the book, Lies Women Believe, make these Oatmeal Bars, and then sit down and study!   Well, maybe just take one bar with you when you sit down to read!  They’re too good to trust yourself with the whole pan!
