Last week I shared about our family vacation and that we ate our meals in our condo. It was simplified in that my girls and I divided up the meals and volunteered to fix the food for that meal. I chose to make the breakfasts for all three days, and also for our Sunday supper. I didn’t want to spend lots of time cooking while we were there, so I prepped as mush as I could ahead of time and stuck it in the freezer, wrapped so it would be fresh.
Let me share what I made and how I worked ahead to simplify things.
Breakfast Bagel Sandwiches –
Early in the week I made the Two-Ingredient Bagels and put them in freezer bags after they were completely cooled. Then I popped them in the freezer. I also cooked up sausage patties and froze them in bags as well. The morning of our Bagel sandwiches, I whisked eggs with a little milk, salt and pepper and baked it in a 9 x 13 pan in the oven until it was set.. I cut the eggs into squares and we popped them on a toasted bagel, along with a sausage patty and a slice of cheese. Yum!!
Egg Casserole and Muffins
Turkey Sausage Egg Casserole – My own little recipe
1 pound Turkey Sausage
1/3 Cup Sour cream
1 Cup Shredded Cheddar Cheese
Salt and pepper
Cook sausage. Drain any fat. Set aside. Whisk eggs, sour cream.salt and pepper. Fold in cheese.and cooked sausage. Pour into greased 9 x 13 dish. Bake at 350 until set (about 30 minutes).
To make this easier, I browned the sausage ahead of time. Then the dish came together very quickly!
I made the Frozen Batter Muffins and baked them up the night before, then warmed them in the morning.
Greek Yogurt with fresh fruit and Peanut Butter Granola , French Bread Toast and Freezer Jam
This was all easy! I set out all the items and everyone helped themselves.
My supper meal was a favorite of my family –
Beef Enchildadas, Refried Beans, Spanish Rice and Scalloped Pineapple
The week before our vacation, I made up the recipe for the Beef enchiladas and then put them in the freezer before baking. You all, these enchiladas are SO GOOD. Making them up ahead and having them in the freezer for a busy day is like putting a million dollars in the bank and pulling it out when you have nothing! All you have to do is thaw them in the fridge the night before and then slide them into the oven for 30 minutes and supper is ready!
The crock pot below had my Pinto beans inside. I cooked them up, then I made my Refried Beans recipe with them, and I also froze them. I did the same for my Spanish Rice.
The only recipe I made up just before dinner was the Scalloped Pineapple. I know this recipe sounds strange, but friends, it is a delicious accompaniment to a meal. My family nearly cleaned out the dish! Jump out on a limb and try this if you’ve never made it before. I bet you’ll be surprised at how good it is and how nicely it goes with just about any meal! I whips together super fast!
Prepping meals and freezing them is such a time saver! Whether you need it in just a day or two, or you make up doubles of a dish for a day out in the future when you’re in a hurry, you’ll never regret working ahead of time to make life a little easier. Breakfast foods and supper foods can all be made ready in a short amount of time, simply by prepping ahead!
