I love good food, but the truth is, I don’t have a problem eating small portions of what I love. In other words, I’ve never eaten a stack of cookies, I rarely eat a whole candy bar in one sitting, and a scoop of ice cream is plenty for me. HOWEVER, when it comes to POPCORN, it’s an entirely different story. Perhaps I should join (or create) Popcorn Antonymous, a group for popcorn lovers like me. I love it slightly buttered, caramelized, or cheesy. I DO NOT like the microwave versions. Give me the kernels and let me do it my own way.
Recently I found another savory flavor to make at home, thanks to my Ina Garten Cookbooks. it was SO delicious and also a cinch to make!
I have adapted a recipe that I found in Ina’s cookbook, Cooking For Jeffery. She used a bag of microwave popcorn, which I’ve already stated I do not like, though I’ve tried many different varieties. I made popcorn, using my favorite method which is popping my kernels in a glass bowl with a lid in the microwave. I added Coconut oil and a little butter and two seasonings that made it unique and so flavorful! Here’s my version of Ina’s recipe:
Parmesan Chili Popcorn
- Popcorn kernels -App. 1 cup – enough to cover the bottom of a glass bowl with lid
- 2 T Coconut oil
- 2 T Butter
- 1/2 Cup Finely grated Parmesan Cheese
- 1/2 tsp. Chili powder (I used one with lime and chili)
Place popcorn, oil and butter in a glass bowl and secure with lid. Pop in microwave kernels until popping begins to slow down. Be careful not to burn.
Remove from microwave and sprinkle with cheese and chili powder. Stir well.
The flavors of the cheese and chili gave the popcorn a wonderful flavor. This might be my new favorite way to eat popcorn! I made this for our small group fellowship last week and I had about 1 cup left over. I was so surprised that the leftover, cold popcorn was just as delicious the next day as the hot popcorn was! Wow!
It also means I’m really going to have to discipline myself when I have this in the house! If my family can’t find me, I just might be in the pantry devouring whatever is left of this Parmesan Popcorn treat!

Yum! I will have to try this recipe! I am a huge popcorn fan like you, and I also prefer to make it myself vs. the microwave butter varieties!

We LOVE popcorn at our house! My husband makes it on the stove on Friday nights for us. Now I’m no food snob, but after eating his “homemade” popcorn for years, I don’t enjoy the microwave bags either. 🍿 😋
I understand! There is NO comparison, is there? I can’t get past the film that is left in my mouth from the microwave varieties. Popcorn lovers know! 😏
I cannot make it to the meeting tonight. I will be popping my corn on the stove (as I have done ever since our kids were little) as your post whet my appetite!
My fave is cooked in coconut or olive oil on the stove and sprinkled with creole or Spicy Farm Dust from Troyer’s.
My kids ALL favored the “fresh-off -the-stove” popcorn lightly salted and drizzled with melted white chocolate in a very large bowl 😆
