I’m gearing up for a Ladies’ retreat next weekend, studying, reviewing and praying much, but in-between I’ve enjoyed being home to cook our meals. Since we were at our home church yesterday, I planned on having dinner here, rather than going out. To me, there’s nothing better than having a Sunday dinner nearly ready to enjoy after the morning church service. It helps to make the afternoon slower, and the fellowship with friends even sweeter.
Yesterday I had the blessing of hosting a young man who is coming from The Wilds to serve in our church. Dale and I loved getting to know him this summer when we were serving there, and now having him here in our church is a special blessing. His appreciation for a home cooked meal makes cooking a joy! We also invited another couple from our church to join us. I loved having all of them in our home and especially around our dining room table.
Setting the table is so much fun. It’s like adding jewelry and accessories to an outfit! I love layering the placemats, runner, chargers, plates and napkins. I went to Hobby Lobby and found chargers in the 50% off fall decor. They’re a golden brown-ish color. I plan to use these for Christmas as well. I have an idea in my head that I hope I can execute come December!
My meal included a new recipe – it was a Spice-Crusted Pork Tenderloin. The package I got included two smaller tenderloins. I couldn’t believe how quickly they cooked! This is definitely an “under 30-Minute meal!” I cooked the meat on Saturday night and then heated it up on Sunday in a gravy that I made from the pan juices and some ham broth that I had made and put in the freezer.
I also made French Peas, baked sweet potatoes and Apple Salad with Dijon Vinaigrette.
The Pork Tenderloin is a Weight Watchers recipe and is delicious!
Spice-Crusted Pork Tenderloin
Ingredients
Cooking spray
4 spray(s)
Kosher salt 1¼ tsp
Granulated garlic, 1 tsp
Dried oregano 1 tsp
Dried thyme 1 tsp
Ground cumin 1 tsp
Ground coriander 1 tsp
Uncooked lean pork tenderloin 1 pound(s)
Instructions
- Preheat oven to 450ºF. Line a small roasting pan with foil (or coat with cooking spray).
- In a small bowl, combine salt, garlic, oregano, thyme, cumin and coriander; rub all over surface of pork.
- Coat a large nonstick skillet with cooking spray and heat over high heat; brown pork on all sides, turning every 3 to 4 minutes with tongs.
- Transfer pork to prepared pan; roast until pork reaches an internal temperature of 145ºF, about 5 to 10 minutes. Let rest at least 3 minutes before thinly slicing.
- Serving size: about 3 oz
Whether it’s Sunday or a busy weekday, this is a wonderful recipe to keep on hand! There’s so little prep with so much pay-off in flavor and heartiness!

I am blessed to have an oven that has a timer that I can set to come on later in the day. I bake the potatoes for one hour and make it turn off at 12:45. We usually get home from church around then and eat dinner by about 1:15. If your oven doesn’t have a timer, you could do them in the crock pot as follows:
Wash and dry the sweet potatoes.
Place in the slow cooker, cover and cook on low for 8 hours, until they are tender. I don’t recommend doing this one on high without water. I would add about 1/4 C if cooked on high.
