Hot Chicken Salad

Southerners love their chicken salad, and stick close to a tried and true recipe, perhaps handed down for generations. These are all wonderful, but friends, have tried Hot Chicken Salad? You haven’t lived until you do!

Earlier last week my hair dresser mentioned she’d had this dish at a restaurant, and I realized I hadn’t made it in years! Then it dawned on me that I had all the ingredients for this it in my fridge and pantry. I immediately knew what we would have for Sunday dinner!

Baked Huli Huli Chicken

Is there anything so delectable as a chicken thigh cooked so that the skin is crispy? Oh, yum! I recently came across a recipe on Cooktop Cove for a delicious chicken dish using thighs that are smothered in a marinade and baked, then topped with pineapple slices. I tried this last week for the first time (on company! Par for the course!). The thighs were tender and juicy and the skin was a little crispy and delightful!

I liked the recipe because the sauce made plenty to use as a marinade and there was also still plenty for brushing on while it was cooking, and some to serve with the chicken at the table.

Bacon, Chicken, Corn Quesadilla

I often struggle with what to fix for lunch!! It needs to be quick, but I also want it to have protein, and of course, I want it to be delicious!

If you get stuck on what to fix for lunch, I have a great “recipe” for you! Recently I found three simple things in my fridge and freezer that made for a scrumptious quesadilla!

  • Cooked chicken breasts
  • Cooked bacon pieces

Baked Chicken that Makes Its Own Gravy

In the Old days women made amazing Sunday dinners that included yummy fixings like Fried Chicken with mashed potatoes and white, cream gravy.  But also in the old days, everyone had to wait until 2:00 to eat dinner!  Most of us are starving when we get home from church, and if dinner isn’t on the table in thirty minutes, people at my house start snacking!  

Lucky for me, years ago I found a recipe from Carnation Evaporated Milk that is called,  Baked Chicken that Makes it own Gravy!  No need to stand and fry chicken pieces after church – this dish is baked in the oven, topped with a Cream soup mixture and baked a little longer, yielding a lovely creamy gravy – perfect for those mashed potatoes that were cooked in the crock pot!
